    Salam Kak Niz utk steam bake roti perancis ini, kita boleh menggunakan sebarang oven atau oven khas yang ada steam baking mode. Kalau jenis oven biasa dimana pintu kaca nya yang kurang tebal, bila terkena dengan asap dari air panas, tidak ada masalah?

    Wsalam sis Lydia, akak gunakan oven biasa tiada fungsi steam injection. Alamak! Tak berani pulak nak spray kalu pintu kaca oven tak tebal, tapi insyaaAllah tak pecahlah 😅

    Thermomix Mutton Mandy Rice 00:00- Introduction 00:22 - Blanch meat 1 kg of mutton/lamb Sufficient water * Install blade cover in mixing bowl. *Arrange meat on it and pour water up to maximum level, ensure everything is submerged. *Boil 12-15 min/100°C/Reverse speed 1. *Strain meat and discard liquid. 01:25 Meat stock ingredients 1 large onion 4 cloves of garlic 30 g of olive oil ½ tbsp ghee Sufficient water Juice from ½ lemon ½ tsp white pepper 4 tsp salt Spices: 2 bay leaves 5 cm of cinnamon 6 cardamoms 6 cloves ½ tbsp coriander seeds 1 tsp coarse cumin 1 tsp fine cumin 1 tsp black pepper ¼ tsp saffron color powder 1 beef stock cube ½ tsp white pepper 4 tsp salt 02:03 - Prepare meat stock: * Put onion and garlic into mixing bowl and coarsely chop 5 sec/speed 5. * Add ghee and olive oil. Saute 5 min/120°C/speed 2. * Add spices. Install blade cover. Add meat, water, lemon juice, salt and white pepper. Slow cook for 3 hours/ 98°C. * Strain stock in varoma dish and skim off any floating oil/fats. 04:25 - Cook rice: 2 cups (metric) basmati rice 3 ⅔ cups prepared meat stock above * measure meat stock into mixing bowl * make sure stock is still hot at least 80°C otherwise boil again use Kettle mode/100°C. * Wash rice and drain well. Add to meat stock in mixing bowl. Cover with mc in place. Start Rice Cooker mode. 05:56 - Prepare smoke: 1 small stainless steel plate or form one using Al foil 1 piece of charcoal 1 slice of butter 06:23 - Burn charcoal until it embers. 06:27 - Once rice is cooked, put plate on top of rice. Place burning coal on it followed by butter slice on coal. Immediately cover and place varoma dish on it. Smoke for 20 minutes. Use Thermomix timer to set time. 07:10 - Transfer rice to a serving plate. Garnish with fried almonds, raisins and coriander leaves. Pile meat on rice and serve with hot sauce and salad. Garnishings: Fried almonds, raisins and chopped cilantro 07:38 - Hot sauce 1-2 tomatoes 5 red chilies 5 garlic cloves Some mint leaves Some coriander leaves 1 tsp salt Juice of 1/2 lemon * Put all the ingredients in a mixing bowl and blend for 30 sec/speed 10. Serve. Salad 1 cucumber- deseeded 2 tomatoes-deseeded 1 large onion A little parsley 1 tsp salt ½ lemon juiced Olive oil Method: - Slice cucumber, tomatoes, onion, red chili, coriander leaves. If using thermomix cutter select slicing, thick. Season with 1 tsp salt, a pinch of sugar or honey, pepper and sumac. Squeeze lemon juice and drizzle olive oil before serving.
