Nyonya Mee Siam + Gravy

Ingredients for 4 to 5 pax:
Fried Mee Siam
• 100ml Cooking oil
• 5 tbsp Shallot paste (10-12 Thai shallots - grounded)
• 4 tbsp Chili paste (10 dried chili - grounded)
• 150gm Fresh medium prawns (shelled & cleaned)
• 3 pcs Tau Kwa (fried bean curd)
• 2 tbsp Oyster sauce
• ¾ tsp Salt
• 50gm Chives (cut into 1 ½ “ in length)
• 250ml Water
• 200gm Vermicelli ( soaked in water for 10 mins then dried)
• 150gm Bean sprouts
Gravy/Sauce
• 1 tbsp Cooking oil
• 1 tbsp Minced bean paste(Taucu)
• 3 tbsp Chili paste(dished some portion out from the fried chili for mee hoon)
• 2 Medium size big onions (cut into half & sliced)
• 4 tbsp Thick Tamarind juice (2 tbsp. seedless tamarind paste diluted with 2 tbsp water)
• ½ tbsp Salt
• 1 ½ tbsp. Oyster Sauce
• 1 tbsp. Black Soya Sauce
• 300ml of Water
Garnishing
• 3 Hard-boiled eggs (cut into desired choice)
• 1 Small cucumber (cut into julienne)
• 2 Calamansi Limes
• 1 Fresh chili (sliced)
• 1 Egg Omelette (rolled then sliced)
• 40gm Peanut (toasted & grounded)

    This version of mee siam and gravy is very different from my grandmother who is also a peranakan. Her tau kwa are cut into small cube sizes and acted as a garnish on top of the finished product. Also she would add prawn stock to the gravy n the prawns would be stirfried together with the bee hoon. Koo chye also acted as a garnish for the mee siam. We would eat it with sambal kachang. Maybe different people different versions? It's always nice to learn new versions.

    I miss the mee siam I used to eat at school canteen in 1970s. It was simple and always yearned to have it. 2 yrs ago tried mee siam from Melaka, that was tasty. Now after seeing your video, I must try making it. Different method especially the sauce. Tq sis for sharing 🤗
