The Ultimate Multigrain, Edamame & Bean Salad....loaded with protein!

This salad is so full of nutrients, protein and is really beautiful with all it's colorful ingredients! It lasts for days in the fridge, and is so portable to bring to work, a picnic or the beach! You have to try it!
INGREDIENTS:
1 cup couscous
1 cup quinoa
1 can of black beans, drained or rinsed (other beans can be used instead)
1 cup frozen shelled edamame, defrosted
1/2 large red pepper, diced small
4 scallions chopped or 1/2 small red onion, diced small
1/2 cup extra virgin olive oil
3 tablespoons red wine vinegar
2 or more teaspoons kosher or sea salt
5-6 grinds of black pepper
4 tablespoons of flat leaf parsley, minced fine (or basil could be used)
1 teaspoon ground cumin (or other spices could be used, like curry, or Italian)
