I have read that insurance companies are reluctant to cover raised roofs. What was your experience?

No, that part was not an issue

So how did you insure during the building process? What if something happens during the build. Also, what did the insurance companies tell you was the reason for not insuring if you are living on it full time>

We could not during the build... it is complete now so now it is all set. I am not sure on your last question.
