We do the exact same type of taco but with refried beans...same toppings and good and crispy...

Im Def gonna make these!!! With meat prices so high, this is budget friendly!

Mom used to make roasted chicken on Sunday and serve it with two sides: mashed potatoes and corn. It was the one night a week we, as children, didn't have to eat green veggies. The combination of corn and potato flavors is heavenly. I'm trying your tacos tomorrow because they look delicious. Thanks!

My all time favorite I think are flautas de pollo ❤ but tacos de papa are a close second!! Sometimes I’ll add a little bit of corn starch to my leftover mashed potatoes to help “thicken” them when I use them for tacos

YUM. I love these, too, with pico de gallo as my salsa. but really anything will work. so perfect, contrasting temperatures, textures and flavors.

I make these all the time and I agree they our go too taco on a weeknight. Sometimes I use sweet potatoes. and if your really in a hurry you can used canned sweet potatoes, but again no butter or liquid should be added to the mix. Great video....again!
