The Best CHEESY POTATO FRIED TACOS | Taquitos de Papa Y Queso

Today I’m going to be sharing with you how to make the best tacos dorados de papa y queso, let me tell you these tacos bring sooo much memories, every time I make them my kids mention remember…… and it’s just amazing how many memories a dish can bring! These one is very special one for me, all my kids ask for seconds! One thing I forgot to mentioned, I like to boil my potatoes with the skin because it prevents the potatoes to get mushy since we adding sauce we want them to be the perfect consistency so that the potato doesn’t come out while frying 😅

Ingredients: makes about 25-30 tacos
Corn tortillas
Oil for frying
3 tbsp unsalted butter
4 medium sized potatoes
Queso Oaxaca or Monterey Jack
Queso fresco
3 New Mexico or guajillo Chile pods
2 Chile arbol (optional)
1 garlic clove
1/2 chopped onion
1/4 tsp black pepper
1/4 tsp ground cumin
1/4 tsp Mexican oregano
1 tbsp 1/4 tsp salt (divided)
1 serving of love 💕

I looove you all hope you are all having a beautiful and blessed day! Enjoy another super easy and delicious recipe! My absolute favorite tacos! Now yesss you can boil the potatoes without the skin for less time, but that will cause the potatoes to be mushy and we don’t want that since we will be adding the guajillo sauce! If you have a air fryer, use it to speed up the process 😅😉 love you and hope you enjoy it as much as me and my family, it’s seriously the best tacos! Perfect to serve with all your sopitas!

This brings back childhood memories my mom would make us tacos de papa and let me tell you they were the BEST tacos ever even now as an adult I make them still and you sharing a different way of tacos de papa brings me joy I thought My family was the only ones. I definitely will try your version ☺️

These look delicious. I've made mine similar except before filling the shells with onions and queso fresco, and maybe some cheddar, I spread with cream cheese and chopped black olives if I have them, then fry. It makes them extra rich but yummy and perfect for the cool weather coming up.
