Crunchy, cheesy, and just down right delicious is all I can say about these tacos. When I first saw these made on America's Test Kitchen I knew I had to remake these on the Blackstone griddle.

Hola! Great good job, Americano! Just so you know, "tacos dorados" were the only style taco known in the USA and came with those from the northern States of Sonora, Chihuahua and Coahuila, fleeing the Mexican Revolution (Pancho Villa) of 1912-1920. Jack in the Box and Titos Tacos still serves a type of Dorado here in So. Calif. Dorados are now making a come-back by street vendors. Soft tacos, from southern Mexico, where flour tortillas and grilled tacos are a rarity, started to make an appearance in the USA, 20-40 years ago when foodies discovered them on vacation in the Southern Mexico beach resorts. Helpful hint: Use grated potato to the beef as a binder instead of cheese, as you cook. Some kitchens use refried beans . Seasoning is key at this point. Both are great. Add grated cheese and crema as a topping. Also... a Quesadilla should Never, EVER contain meat. A high quality Queso, is Queen in a quesadilla. The bridesmaids are alway grilled mushrooms, zucchini, nopal, shredded cabbage, any vegetable. And... Find yourself a good cooked salsa recipe. Cholula is perfect for the lunchbox or glovebox. Buen provecho, ya'll!

Been eating them in San Antonio, Texas since the arrival of the taco to the USA. We make them ourselves, typically, though many restaurants here also make them.

So this is sort of interesting. My father grew up in southern california in the late 40s to early 60s, and learned to fry corn tortillas for tacos from a Mexican girlfriend's mother. He taught me to cook tortillas the same way and I taught my wife to do the same. My wife, who is from the east coast and knew nothing of Mexican cooking, decided to start making the taco filling her way, which was frying onions, add in the beef and seasoning, and then add beans, both whole or refried as a binder. add cheese and hot sauce at the end. Little did we know that her method was apparently more authentic tacos dorados? thank you for the added information!

I'm from Mexico and we prepare those ones every other week, are delicious... you can also prepare them with chicken... if you are on a lazy day can use rotisserie chicken leftovers to prepare them, some avocado, onion, and tomato, homemade salsa and tastes delicious!

Excellent presentation. Thank you. Loves me some fried tacos. My grandmother made them in a similar fashion but would fry them in a small iron skillet with bacon grease. I would give up my 401k to have her make me some of those again.

I’m fairly sure that ATK used the baking soda because it helps to brown the beef quicker, which I guess could help it retain more moisture as a side benefit. The ATK host, Dan, made a video about using baking soda on beef. Great video!

Those tacos look great! I love your show Hussey! I use the trick of rolling the bacon in the package to make it easier to pull apart you taught me everytime I make bacon. I love to learn new tricks like that. I appreciate your show very much!

I believe these are called Taco Dorado (with the 'd' not a 't') Dorado, meaning golden in Spanish. They really are a golden crispy treat. They are a great way to stretch a little leftover meat &/or potatoes into another meal. Now I want a taco, please.

I had the deep fat fried tacos on Olivera Street in LA in the 70’s THE BEST l ever had before or since. I have asked every Mexican restaurant I have been to on the East Coast no one made them that way!! I was shocked. Still trying to find one.

Thank you for showing us how to do this. I love your channel. We are really trying to quit eating out, because it's $20+/$25+ per person and we can't afford that. But, we watch Masters on KZread (like you), and you are teaching us how to have the faith and not fear doing this stuff ourselves. Because I don't have all the skills and brains that you do, but what you are showing me, is something that a "Normal Guy" can figure out and learn to do, even if it ain't perfect. However, for my family, I'll learn to do whatever is necessary to help them eat cheaper but better.
I do something similar when making Venison Burritos. I originally saw the Guys at Southern Boyz Outdoors make them. They are great.

Hi…..just landed on your site, and your name surprised me……my husbands name was Hussey. He unfortunately died a few years ago from a heart attack. He was from St John’s, Newfoundland in Canada. He was one of 24 children.iIm wondering if you guys were related somehow. You do resemble a few of his brothers. His name was Robert, we called him Bob. I live in Denton but work in High Point. I'm glad to see the Tville one reopened with a better design but it's too busy to go there.

Half an onion is ALWAYS enough. One of the worst things I see in cooking is people think they have the whole onion so use it, but then the mix is not balanced, the other mistake is so many people don't cook it, the onion is raw and leaves a textural and flavor impact that ruins the dish, instead of complimenting

A processor shreds that cheese so much faster

The time is about a wash getting all that together. By the time one gets it out, puts it together, process, and then break it down, I’m done with a manual shredder. If I was doing a lot of cheese, I’d use a processor. I just don’t think it’s necessary here.
