    “Vacpacbag”😂 It’s okay, I’m just joking around. His accent is a little funny, but that is some serious cooking right there. This dish is very technical, but all the ingredients on the plate make sense. Little garnishes of pea shoots or baby wood sorrel or this or that flower may be fashionable, but are not always necessary. And what’s important is that, even looking at it on my screen, I can taste the dish in my mouth and visualize each component on my palate. The beautifully cooked pork, the crunchy potato, the mushrooms with that acidity from the jelly, the gentle floral note of the lemon thyme on that kidney, and everything brought together by the rich sauce and the fresh cider gel. I’m honestly salivating at the moment, bravo Chef!!!
