    I watch quite a few cooking videos but Chef Jean-Pierre is my absolute favorite. His recipes are delicious and I love his personality. He is fun and makes it all look easy.

    Many people can cook…but when I watch this guy I feel like I’m in the kitchen with a friend. So energetic and the #2 ingredient after onion….is humor.

    Looks great! You seem to worry about how long your videos are. I think they are perfect. You could do a full on cooking class that was 1.5 to 2 hours long I would watch the entire thing. Probably more than a few times. Thats a great idea. You should do that one day! Just as a treat for those of us that enjoy learning from you.

    People don't have the attention span..these doctors give Similac products..people eat like kings in the USA. ANIMAL 🍖RED MEAT , EGGS AND CHEESE. OK..But if you serve vegetables..it's like folks don't seem to like too much veggies..it's sad. Because..roots, greens. Onions,rice, grains, beans..fruits are really great source of energy, FIBER..and flavor (I.e..herbs-spice ..yummy)....American values their love ❤ affair with warm melted cheese. Rare meet..we don't fast much any more either...oh well to each his own way in life..right? We need to suggest a balance diet to our younger generation

    Before my wife retired, she worked 30 years at a national sea food restaurant as a server and every once in awhile she would bring home some of the left over baked potatoes (wish it could have been Lobster or shrimp) she used them for hash browns, or potato salad, mashed potatoes, or cottage/shepherds pie they were great, there is a lot you can do with baked potatoes.

    I've been doing this for years, but I do par boil the potatoes so when I add them they crisp up quickly. I'll also add a couple of dashes of cayenne or pepper flakes along with a dash of smoked paprika for a slight touch of smoky heat. My kids love this simple dish. When they were little they said "Dad, can you make the egg mess stuff this morning?" Good times back then.

    Chef, I want to say this. I am a culinary graduate as of 2014. The school I attended did everything in its power to insult its students and belittle them. Upon graduation I was no longer very interested in the culinary field. You are so enjoyable to watch and learn from. You have helped me to want to get back into the game again. Thank you!

    I make something similar fairly regularly. Not a fan of green bell peppers, but love the other colors. Sometimes, I'll just scramble some eggs and mix them right into the potatoes. Other times, poached eggs. Potatoes and eggs, no matter how you combine them, are a match made in heaven! 😇

    Just made this recipe for supper tonight on a Wednesday after work and it was cheap, filling, and as chef Jean-Pierre always boasts: amazing. Also super easy to prep with a good knife. Thank you and your editing team for the KZread uploads. They are one of the simple pleasures of life that make me look forward to each week. Your videos are perfect as-is, ranting and candid mistakes and all. It makes me feel better when I inevitably dork-up a new recipe for the first time. Love 'yall~

    Chef JP: I made this recipe for my sisters and their children. All plates cleaned! I made scrambled eggs the way you taught, with cream, extra yolk for color, and a little Pellegrino to trap the proteins as you taught! Lessons learned: I prepped everything like you: I wouldn't say I like a mess. That you taught me with the little and medium bowls of prep.. 2nd Lesson: Somehow, I put the potatoes before the onions. I put them right in. Clarified butter (your lesson helped). I recovered. I wanted to add parmesan Reggiano. I did. Now I learned exactly what you said. Drops to the bottom (when I was making scrambled eggs) were hard to clean. I had trouble, but I FINALLY got it clean. You said be careful but added too early. Oops! 3) I used the cookie cutter large to put the scrambled eggs into. It worked. All the ingredients you teach us they loved! They have not seen the videos and cannot boil water! I told them I would make them Croque Monsieur For lunch and Tuscan chicken for dinner. I have slowly noticed that they come to my home more and more. Now they will bring their husbands. So will have to multiply the recipe by the number of people. OMG chef. I am no longer making enemies in the neighborhood. AND and old lesson: Never let a woman or girl go hungry. They will kill me.

    The nice thing about being retired is that one has far more time in the morning to try recipes like this for breakfast without worrying about having to rush out the door to work. And no worries either about how much garlic you throw into the pan 😉😉! I'll also cook up everything in this recipe except the eggs, place the mixture in small, serving size freezer bags so I can take one out, warm it up and scramble in an egg or two for a quickly prepared meal. Another winner Chef J-P!

    Dear Chef, Please prepare a video using Short cuts. Such as frozen diced onion, frozen veggies, refrigerated mashed potatoes. This would be very helpful for a retired guy like myself that has chosen to start cooking at age 65. I don’t use short cuts too much, but they do come in handy. Your fan, Roger

    I make this breakfast about 3 days a week i use turkey bacon or breakfast sausage with some red pepper flakes for a slight kick. the kids love it.

    @@daphnepearce9411 yes, both are true! Australia is 9 to 11 hours ahead of GMT, the US is a few hours behind. So Australia is always at least 14(?) hours ahead of the USA. At least according to our clocks.

    I watch them WHILE I work! haha I'll be working on something with his video down in the bottom of my screen, and every time he says, "Look! Look! So beautiful!, my friends!"     Potatoes and eggs was the go to breakfast on Sunday and or lunch on saturday..my mother and father would make it more like a frittata. It a great combo potatoes and eggs !

    Looks delicious! I make an egg and potato thing almost every Sunday morning, so this will be on the menu soon. I like to use a 3-quart non-stick mini-wok that my late mother-in-law had but that she had never used. The higher sides make it easier for me to flip everything without pieces flying onto the kitchen floor (where our pups wait for such morsels as if they were manna from heaven).
