Ingredients
Pork neck - 1 kilogram / 35 oz
Potatoes - 5 pcs
Onion - 1 pc
Pepper - 1 pc
Carrots - 3 pcs
Garlic - 4 cloves
Bay leaf - 2 pcs
White wine - 200 ml
Olive oil - 60 ml
Bay leaf - 2 pcs
Black pepper - 1/2 teaspoon
Red pepper - 1 teaspoon
Thyme - 1 teaspoon
Salt - 1 teaspoon
Method of preparation
Cut the pork neck into 1-finger-thick pieces. Heat a little oil in a pan and sprinkle a pinch of salt. Arrange the pieces of meat, salt. Sear the meat for 2 minutes on each side on a moderate heat. We take out the meat.
Cut the onion, pepper, carrots and potatoes in large pieces. Place them in a tray, add whole garlic cloves and bay leaves. Season with salt, thyme, black and red pepper. Add olive oil and white wine. We mix well.
Arrange the pieces of meat on top of the vegetables. We cover the tray with foil. Bake in a preheated oven at 250°C for 40 minutes. Then remove the foil and bake for 10 minutes at 220°C.
