Absolutely fascinating! Thanks so much for posting this. I'm very much into vintage stoves and the earliest thermostats end to have the biggest mystery about them. And those who restore them don't want to share even the conceptual information.

Thank you for posting this! Now I have an idea of how my '35 stove works.

The other day I was cleaning my oven and found a strange rod inside it. I suspected that it was thermostat, but what for?! I thought temperature in the oven was controlled manually (open loop control). This video taught me that its a closed loop control. Thank you for sharing this.

On these thermostats how is the bypass flame be adjusted should it be too large? I have a customer with a oven that uses this type of thermostat and the bypass flame is too large causing the oven temperature to continue to rise. In other words the flame does not throttle back small enough. Thanks for your help.

According to the video you could make the hole smaller letting less gas bypass.
