How to Calibrate Your Chambers C Oven and Thermostat

Chambers ovens are incredibly precise, even 70 years later. If your oven isn't working properly, you probably just need to calibrate the oven and thermostat. Like most things with the Chambers, all you need is a wrench, screwdriver and some time.
This video walks you through the entire process so you can make sure your oven is working perfectly.

    Thank you for these fabulous videos. I converted from natural gas this morning to propane and everything works! I'm so thrilled and amazed it wasn't a nightmare. Your wrench measuring trick was super helpful.

    I have gotten our 90C all adjusted to spec thanks to your wonderful tutorials. I had our stove thermostat rebuilt by Repco of Fort Worth,Texas, the only rebuilder of of these older capillary tube thermostats in the USA. All the stove rebuilders and thermostat rebuild services send their thermostats to Repco. Did all the set up and adjustments thanks to thiswonderful video on setting up the oven thermostat. Thanks so much for all of your help. BTW, you need to set up your videos with a donation tab.

    Thank you. Helped me dial in my oven and get it working correctly. Had no idea how badly tuned it was until I went in and adjusted. Some adjustments to the stove and some translation to my model b, and I'm cooking with gas again. Thank you.

    Are there any Chambers stoves that have automatic pilot lights? Do all of the Chambers ovens require manual lighting?

    @@VintageStoveChannel when lubing a gas valve ALWAYS use silicone grease-it's non combustible, never wheel bearing grease. i clean the brass valve parts with acetone or lacquer thinner. never use abrasives on valve parts. 0000 steel wool works nicely.

    My Chambers C oven burner has uneven flame sizes. As I adjust they bypass flame height to try to get 1/8 blue flames, one area of the burner (near the pilot) has no flames, and another area has 1 inch high yellow flames... What do you suppose causes this?

    Two things are going on there. First, where there's no flame, the holes are probably clogged. If you have something thin and hard (like a welder's tip or a nail of the appropriate size), you can poke through them to see if you can clear it. It's possible that you have rust flakes in there that are blocking the pipe. That's pretty typical. For that, you can pull the burner our and shake out the flakes. If you want to do it right (and can live without your oven for a few days), take that palte on the end of the burner off, shake out the rust flakes, then soak the burner in a 50/50 solution of water and vinegar for a few days. Rinse it out and let it dry completely. Then season it like you would a cast iron pan (I use Crisco). This will neutralize the rust and give your burner a protective coat that will last years. As for the orange flame, that is the air mixer plate at the end of the burner (you can see it when you lift up the shelf in the pantry). Loosen the screw, close it a little to restrict the amount of oxygen entering the burner, then tighten the screw back up.

    Hello, thank you for the wonderful video. I followed your instructions to a Tee but it’s still not working properly . It set it on 250 and it heated to 400. I set it to 400 and it went to 550. Any other suggestions?

    If you set it to say, 300 and let it run for an hour, checking every 20 minutes, what happens? The dial setting needs to be consistent in order to figure out if your thermostat is broken or you need to calibrate again.

    Hello, thank you for your video. I have a chambers model b. I pulled out the knob, but in the inside it does'nt have any numbers like the model c. How do you calibrate a B model?

    For the oven thermostat temperature calibration should we testing 3 times for 20 minutes each at 3 different temperatures or do we stick to one temperature number/goal for all 3 adjustments? Thanks! Also, on my 1940s Wedgewood I have two screws like this Chambers does which when loosened, allows the center screw to adjust the thermostat and when tightened, locks it in. When my vintage stove guy showed me how to do this years ago (he's now retired and moved away), he mentioned nothing about the round plate itself being able to be pushed in or pulled out. He implied the screws would do all the work and any extra monkeying around haha would not be a good idea. Do you think the concept is the same for both stoves and that the Wedgewood plate probably works the way you showed? Thanks! p.s. If only one temp to aim for, would it be wiser to set the thermostat initially to 200, 300 or 400 and if so, why? Thanks again!

    That's a model BJ thermostat you have and it functions differently. Listen to your restorer about how to adjust that. Testing should be done at one temperature, 400 degrees, until you get consistent readings. Otherwise, you have no frame of reference for actual performance. If you want to be very thorough, after you've locked in 400, let the oven cool down completely (so, the next day) and then test at 350. If it's perfect at 400 but not at 350, your bypass needs adjusting (it's almost always too high). The reason you use 400 is because all thermostats are most accurate in the middle of their range. 400 is pretty much always on the high end of the middle, so it gives you results quickly and accurately. It's also in the middle of typical cooking temperatures (most recipes call for something between 350 and 450), so you're aiming in the middle of the oven's most frequent use.

    Thank you for the videos. I completely refurbished our C-90 after we purchased it in 2014. Unfortunately, I had very little information on how to adjust the oven flame height. After watching your video, I discovered my oven pilot will adjust. My bypass flame and my temp. flame will not adjust. Is it possible both valves just have trash built up inside and just need to be cleaned out, or is the T-stat. bad? My wife loves Miss Chambers and cooks with it every day, I just want to get the oven working correctly. Thank you again for the videos.

    If the bypass flame won't adjust when you move the flange (or turn the screw), then there's likely debris inside the thermostat. But you have to really know what you're doing to work on them. Some parts of it cannot be disassembled at all and it's fragile. There is one place left that rebuilds them, though. If the oven flame won't adjust, then you have a fixed orifice cap and may need to get a new one of the proper size.

    There doesn't seem to be any sort of indicator against which to gauge the temperature dial. What I think is 350º oscillates between 396º and 336º. I don't have a way of knowing what 400º is, much less measure the correct flame height for it. Any suggestions?

    I'm not sure what you mean. You're using a good oven thermometer, correct? Those are the two things you need - the dial on the stove and a good oven thermometer inside the oven. As for measuring the flame height, use a wrench like I do to get the height correct.

    @@VintageStoveChannel thank you for responding and Happy New Year. I was referring to the lack of a line on the oven itself against which you can accurately position the temperature on the dial. I ended up drawing a line with a Sharpee (kind of like the line with the arrow on your video). I also ordered one of the thermometers you recommended; between drawing a line (using 400º oven temperature as a basis) and the thermometer, the oven seems to be pretty accurate. It was extensively restored by someone in Michigan, so I'm sure he did everything he could to calibrate it properly, I'm just not used to it yet.

    Is the fluctuating flame that you get when the bypass is turned down normal? I was getting that so I increase the bypass slightly. This improved the flame steadiness, but makes all my low temperature settings to high.

    It's a matter of draft. First, make sure your mica window is intact - that adds to a lot of fluctuation. Then, if you're still getting that kind of discrepancy, close the oven door and look at the bypass flame through the mica window. If it's still fluctuating, I'd say there's something obstructing the flow of gas - most likely crud in the orifice cap or the jet it's screwed into. And you're right about the cause and effect here - a higher bypass flame will make your low temperatures too hot.

    Hi, thanks for posting this video. I have a model 61c with a wilcolator type M-8 that is inconsistently off temp. It's dirty on the outside, action on the dial doesn't feel right, and in general I just believe it needs to be serviced. I reached out to TOAC about reconditioning, but never heard back. Is this a service you're offering, or know someone who is?

    Sorry for the delay. I outsource that work to Repco, in Texas. I believe they accept orders from homeowners, but I'm not 100% certain. But yes, when a client needs one rebuilt, I send it in and, if I have their stove in front of me, install the newly rebuilt thermostat.

    Both directly and indirectly, yes. If you're using natural gas, you can restrict flow with the orifice cap. The thermostat has controls for the bypass and pilot flames and also regulates how much gas flows through it to the oven, which determines the flame height.

    For propane, you can only adjust the air shutter, you cannot adjust the pin.
