In this episode, we travel to Kagoshima to meet with Mr. Sakamoto and Mr. Kawaji, two tea farmers that specialize in some of our favorite Japanese green teas. At the farm of Mr. Sakamoto we learned about Gyokuro and Matcha, considered to be the two most sought after and most expensive green teas in Japan. These teas are very labor intensive to produce and they have a very unique flavor profile to them.
When we met with Mr. Kawaji in Kagoshima, we learned about Fukamushicha or deep steamed teas. These teas are steamed for a longer time so they develop more of these steamed vegetable or even fruity notes.
