This is the most elegant Chocolate Layer Cake and a decadent chocolate dessert, by far one of the best chocolate cakes ever. It is moist and rich, with thin layers of chocolate sponge cake brushed with espresso coffee, an irresistible chocolate and cream cheese frosting and a silky chocolate ganache topping.

Ingredients
Makes 8 -12 servings
Chocolate Sponge Cake
8 eggs
1 cup (200g) sugar , divided
1 tsp (5g) vanilla extract
1/2 cup (60g) all-purpose flour
1/2 cup (60g) unsweetened cocoa powder
1/2 tsp (2g) baking powder
1/2 tsp (2g) salt
For brushing the chocolate sponge layers
3.5 fl.oz (100ml) espresso coffee , room temperature
Chocolate Cream Cheese Frosting
8.5 oz (240g) semisweet chocolate
2/3 cup (160g) whipping cream
10 oz (300g) cream cheese, room temperature
1/2 cup (60g) powdered sugar
2 tbsp (16g) unsweetened cocoa powder
1 tsp (5g) vanilla extract
1 ⅔ cup (400g) whipping cream (35% fat) , chilled
Chocolate Ganache
7 oz (200g) semisweet chocolate
7 oz (200g) whipping cream

Thank you #HomeCookingAdventure for this recipe. A great and easy knock off of an Opera Cake that anyone can make at home. I am intrigued by the mix of espresso simple syrup and chocolate cream cheese -- a fun little twist to reignite the palate. The icing on the top is a nice change from the standard chocolate curls and powdered sugar. All of your little twists and tweaks make this one of the most inspiring and educational channels for home cooks & bakers. Appreciate the exquisite cinematography and music.

Thank you Craig 😍...hope you will try this one too. The espresso coffee is for enhancing the chocolate flavor while adding moisture in the same time and the cream cheese frosting is simply one of the best. It is for sure my favorite chocolate frosting for chocolate desserts.

Is the cocoa powder natural or dutch processed
thw whipped cream mixture seems little soft to apply on cake., does it need to keep in the fridge for 1 hour?
When i want to cut opera for example it sooo bad mesarument so wavy and cracked how could solve this !!

For some reason, my cake was stuck to the parchment paper when I was peeling it. It has never happened to me before, could it be because there is no oil in the cake batter? (It would not make sense though since it didn't look like you had that problem).

you have to grease the pan before adding the parchment paper... I usually use butter
