The Japanese Masters Series: Dry & Bitter, I Suppose by Atsushi Suzuki (The Bellwood, Tokyo)

Japan has always held a special place at Empirical. We are honoured to celebrate the launch of Empirical in Japan and asked five Master Bartenders to share their thoughts on our core products and showcase their interpretation through unique cocktails.

This cocktail is inspired by a conversation with a guest at The Bellwood. When asked for a dry and bitter cocktail, Suzuki-san wanted to step away from the classics. “The Plum, I Suppose turned out to be a perfect fit. Fino Sherry brings dry, crisp notes, while the very herbal Cocchi Americano adds sweetness and bitterness. A bit of Cynar on top gives more depth to the final drink and brings it together”.

Atsushi Suzuki has worked behind bars around the world, in Tokyo, New York, London and Toronto. After compiling a bounty of international awards, he started the "Bellwood Experiment Inc." in 2018 and the doors of The Bellwood opened in Tokyo in 2020.
