The Japanese Masters Series: Smoked Plum Sour by Kazunori Shizuya (Shinjuku Whisky Salon, Tokyo)

Japan has always held a special place at Empirical. We are honoured to celebrate the launch of Empirical in Japan and asked five Master Bartenders to share their thoughts on our core products and showcase their interpretation through unique cocktails.
-- Episode 5: Kazunori Shizuya - Shinjuku Whisky Salon, Tokyo --
Shizuya-san wanted to emphasize the fruity notes of The Plum, I Suppose in a very refreshing cocktail. “ This drink is inspired by fresh, slightly sour drinks like Clover Club or a Pink Lady.” To pair the flavors of the kernels, he opted for an infusion of Japanese green plums in a 5-year old Laphroaig Islay single malt scotch. Shizo bitters and the acidity of lemons bring balance to the cocktail.
“Throughout this drink, one gets to enjoy the many expressions of plums. It has got complex layers but with a light and refreshing finish.”

Kazunori Shizuya is the owner and head bartender of BAR LIVET and BAR Shinjuku Whiskey Salon in Shinjuku, Tokyo. He is part of Whisktail.tokyo, a team of bartenders whose goal is to develop and popularize whisky-based cocktails. He’s a certified Master of Whiskey and a regular contributor for Whisky Galore magazine.
