Today I’m at a bakery called Chez Sagara, which is located at the foot of the Mino
Mountains, in Tanushimarumachi, Kurume-City, Fukuoka. The bakery is open from 10AM
to 4PM and it attracts people from all over Japan, who come all this way, to this remote
location, standing in line, not matter the rain.
And the man who makes all of this possible is the owner chef, Kazuhiro Sagara.
Kazuhiro’s techniques are world-class, as he has entered the world-renowned pastry
competition, Coupe Du Monde, and has received three silver medals in the Japan rounds.

I am always amazed at how the Japanese strive for perfection. I am overwhelmed with respect.
As a French Pastry Chef, I'm just AMAZED by that Chef. He really endorsed all the food philosophy that we have in France, the importance of the raw ingredients, with the Japanese creativity and perfection touch. All the products are just masterpieces and even the baguettes are mind-blowing ! Merci Chef ! Keep up that fantastic work! Arigato !🙇
もうね、本当にすごい人だし本当にすごい店。職人の仕事ってこういうこと。簡単にやってそうに見えるけど難しいんですよ。これをやるのが。何度も失敗しながらずっと諦めずに美味しいものを作るんだっていう強い気持ち。絶対一度は行ってみてほしい。

The entire staff just focused on their duties, keeping their head down and doing everything they need to do to get the bakery ready for opening. And the chef seems really calm and patient. As a french roaming the internet I feel like Gordon Ramsay "finally some f ing food" yeah finally someone who calls himself a boulanger patissier with knowledge studied in France who actually is a real one and makes it like in France, I'm so done with all the fakes either burning the bread, making it too big, not knowning how to make a baguette or only making "pain de mie" and telling the world they studied in France. Thank you Sagara-san you gave me back a fraction of my faith in mankind

One of the first things on my agenda, when I’m visiting my nephew who has been living in Japan with his family, is to visit one of a myriad of excellent bakeries in Tokyo. This baker is very dedicated in producing mouthwatering pastries. I cannot wait for another trip to Japan and dine on sushi, udon, pastries and breads.

I always wonder if the Chefs in these kinds of famous and other high - end joints let their employees taste the creations that the so painstakingly preparr everyday! Remember, the bulk of the hard work is done by them! If not, how would they ever know how their creations taste!

Magnifique. Même nos cols bleu blanc rouge en France sont loin d'être aussi irréprochables en terme de respect de l'hygiène concernant l'obligation de porter des gants spécifiques et des masques. Bravo à ces Japonais. Des valeurs et rigueur perdus en France depuis plus de 50 ans pour une démocratie et une liberté incontrôlées par le "laissé faire" et le tout accueillir. En France des valeurs, on a fort à casser les mauvais codes pour reconstruire une France avec beaucoup d'humilité, de facto, des codes sur le respect bien oubliés.
So amazed by all the breads and pastries created and the chef's continued perseverance to be better. I am now very embarassed of how I bake.

Very interesting video ! Thank you. A small question: For the croissant, Sagara says that he is doing 2 times triple fold + 1 time double fold. Can you explain what is a Triple Fold and a Double Fold please ? Thanks !

You have 1 layer at the start 1 time triple fold : 1 layer x 3 = 3 layers 2 times triple fold : 3 layers x 3 = 9 layers 1 time double fold : 9 layers x 2 = 18 layers

Officially he may not have won the top prize but he certainly is representing Japan now 😁👍🇯🇵🥇 The piano music music is too loud with the voice over intro. It makes it hard to hear what’s being said and doesn’t set the stage for the video. Also a better lapel mic is needed for outdoor interviews with a decent wind muff.
