In your first recipe I would suggest baking in three stages. First bake only the eggplant for 30', then another 30'' with the filling, in the last 5' with the egg and cheese. In Greece we make an eggplant recipe called ''paputsakia''. We dig the eggplant like you do and fill it with a thick bolognese minced meat sauce, cover with béchamel sauce and cheese on top and bake. Today I picked a basket of eggplants from my garden and I will make your recipe.

Fully agree. Lucky enough she did only 2 eggplants. If there were 5 or six she would've taken our full time She must understand that ti shiw just one of each how to cut or grate or smash

I like the first recipe, except I wouldn't cook eggs for 30 minutes as I don't like hard (boiled) eggs. I would add them towards the end of baking
