The Effect of Sugar on How Much Cookies Spread
Chocolate Chip Cookies
10 oz (283g) butter, softened
1 c (200g) sugar*
1 c (213g) brown sugar
2 Tbsp (14g) toasted milk powder
2 eggs
2 tsp vanilla extract
3 c (420g) AP flour
1 tsp baking soda
3/4 tsp baking powder
1 tsp (6g) fine salt
6 oz (170g) bittersweet or dark chocolate chips
6 oz (170g) milk chocolate chips*
1. Cream butter, sugar, brown sugar, and toasted milk powder together until fluffy and lightened in color, approximately 4-6 minutes. Scrape down the bowl.
2. Add the eggs and vanilla one at a time, waiting until the first is completely incorporated before adding the next.
3. Mix in the dry ingredients on low speed just until there is no visible dry flour.
4. Add the chocolate and mix until combined.
5. Cover and refrigerate the dough for at least two hours.
6. Scoop onto a parchment lined tray. For a number 16 scoop (roughly 1/4 c) bake at 350F (190C) for 15-20 minutes or until golden brown just around the edge.
*for a thin and crispy cookie, increase the sugar to 1.5 c (300g) and decrease the milk chocolate chips to 2 oz (57g)
*for a thick and gooey cookie, decrease the sugar to 1/2 c (100g) and increase the milk chocolate chips to 10 oz (284g)
Toasted Milk Powder
1/2 c (56) nonfat dried milk
1. Add the dried milk in a thin layer on a parchment lined sheet pan and bake at 300F (150C) for 5-10 minutes or until golden.

Too much butter can also cause them to spread too much. Found out the hard way when my cookies turned into one cookie hahaha

I love how you describe each ratio as just a different result, rather than any one result being the "correct" one
I'm a huge fan of the fact that you demonstrate how each change makes different cookies while not going "this way is correct, these are wrong" but instead going "this is how you get result A, result B, and result C" without judgment.

@@kunaiwithchain5278 Those are called digestive cookies. And depending on the type of flour and other ingredients you use, they can sometimes have a natural sweetness even without sugar or chocolate.

I love how you give equal respect to each of the different methods of baking something. Everyone has their own preferences when it comes to their own food, so I appreciate how you explain the differences without saying one way is better than the other
I usually dump more chocolate chips in because I realized get more cookies out of a recipe. I never thought about it changing the consistency of the cookies. 😂

I mean tbf he is also reducing the ability of sugar so the texture won’t be that effected if you still add the right amount of sugar

i love these types of videos so much. i always find things wrong with recipes but never know how to fix it. i love chocolate so much but isn’t really in love with a super sweet base and also happen to enjoy the softer thicker cookie so will definitely be using the third recipe next time i make cookies!

I use the 3rd recipe and i didn’t like it that way i want mine as original you can see kinda chewy. Now i know why it didnt turn chewy happened only once and i forgot what i did to recipe which gave me my kinda taste😂

Me too, exactly, 💯!! I also found dark chocolate chips that aren't as sugary sweet & those combined with #3 method... now I want chocolate chip cookies
People do not utilize adjusting the amount of chocolate enough!! I feel like the default is just “a whole bunch” but with some recipes cutting the amount can be a game changer. Sometimes I want to be able to taste that complex deeply buttery cookie I worked so hard on 😅

You should just take a standard recipe and adjust it to your taste without fckn up the balance and adjust to the a mount you want its not rocket science but using your head and doing simple mather will usually get good results

@@chrisblom121 adjusting without changing the balance means scaling the recipe up or down, as you increased chocolate you’d increase everything else so nothing would really change? Baking is chemical reactions. Chocolate is slightly acidic, as is sugar, changing the ratio will absolutely affect your raising agent reaction and crumb etc.

I haven’t found many chocolate chip cookie recipes that I like very much .. this guide has very good info. Can’t wait to change ingredient ratios in chocolate chip cookies and hopefully get good cookies

@@unluckyrock420 I think because I'm used to biscuits (English biscuits) which are usually crunchy I didn't get used to soft cookies and it feels wrong to eat them like it's undercooked. Eh 😂

@pandabear181 cook them to were there soft when warm and crunchy when cooled off! Both are good whether you like mouth melters or biscuit style! 👍 If to soft, pop it in the microwave to dry it out a little😆

That’s how my mommy likes hers too. Everybody else in the fam wants them chewy. I just completely flatten hers with the back of the spoon so they spread and she gets her crispy bottom and a little extra browning. I can still take them all out at the same time too. She still to this day accuses us of eating wet cookies every time I bake. 😂😂😂😂

My absolute favorite chocolate chip recipe used all brown sugar and let the batter chill in the fridge for 24-72 hours. The result was similar to the less sugar/more chip recipe in the video, but still with a complex, delicious, soft and chewy cookie. I recommend experimenting with it sometime, even though it takes a while.
