@@pattiannepascual that was my question, too... but I’d call them vegetarian marshmallows (semantics, maybe, but ingesting gelatin is more base-level veg than the higher bar that veganism sets) :)

I love using marshmallow fondant over the store bought kind. A tip if you're having trouble with the elasticity/texture of your fondant is to add a little corn syrup (1-2 tsps) when melting the marshmallows. This yields pliable fondant that doesn't dry out as easily.

Hi, Namita! Cover it in a little vegetable oil (like below) and store it in an airtight bag. The less air the better so your fondant doesn’t dry out. Your Fondant will last for weeks!

Yes, you can flavor this with vanill. Add before before you mix in the stand mixer. I hope this helps. It is different from the ones made entirely of sugar in flavor and texture.

Gemma, when you make your choux pastry, do you cool down the dough before adding the eggs?

Hi Elaine. Yes, you need to let the temperature come down before adding the eggs. This is key, as adding the eggs too quickly will cook them before they are incorporated into the dough, leaving you with a bit of a mess. Once the dough is warm, not hot, you add in the ROOM TEMPERATURE eggs. Room temperature eggs is another trick to keeping them from scrambling in the dough. I hope this helps.
