Today we are making this super simple, but delicious strawberry jam using low sugar SureJell. This was the first thing that I ever canned and still make it every year. We get to enjoy the taste of fresh strawberries all year long!

She’s always so eager to help! Then when she starts to help her expression gets so serious! I enjoy the whole videos but watching her jump in to help is precious. Reminds me so much of my granddaughter when she was between the ages of 4-7. Now video games took over 😤. Lol

Maggie is becoming quite the little helper, your jam looks delicious.
My dad was 6' tall and all of 145 lbs. In the summer, he'd eat a huge butter bowl of ice cream with a good 1/4 th cup of Mom's strawberry jam on top. Pretty sure she had mixed emotions about that because it sure didn't last long!😂
Love your videos. My new favorite homesteading show! I love that you work with what you have . To many of these types of shows have “the best” of everything and takes away from what homesteading is all about, in my mind. Keep up the great work.♥️
You explain everything so well. The words you use to teach help. I’ve canned for years. I am 75. But your easy to follow demonstrations are so beneficial for those young people just learning. I just found your blog last week and I enjoy having a new family to watch. I grew up on a farm and my family (after I married )farmed during the children’s formative years. Blessings.

We only ever add sugar to strawberry jelly. Some folks water bath, some folks don't. Some folks run it through a sieve to get the seeds out, and some folks don't. But everybody needs to ladle that foam off!!!
My granny use to turn her jars upside down and never had anything go bad. Great job!
I have been making this for years. We love it! I put my jars in the freezer. I have also just put it in plastic containers in the freezer. Both ways work really well and the jelly keeps with no issues. Maggie is such a good helper. I hope she always loves spending time in the kitchen with you. So many memories to be made. Memories that she will always remember.
Thanks for sharing! I still make my jam the way my grandma did.. It is a non pectin recipe and you just use a cup of sugar and two tablespoons of fresh lemon juice per pound of crushed/mashed berries. Just bung it all into a pot and boil until it hits 225-230 on a candy thermometer.

Forgot to mention the butter! Grandma said to use a chunk the size of a pullet egg ( I use about 1 -1.5 tablespoons unusually for a 6-8 pound batch) to reduce the foam. :-)

Mama always turned the jars upside down so she would not have to use wax on the top she said like you said the air pocket is on the bottom and it seals the top better and keeps it from molding plus it helps them to actually seal faster too because that heat is around that ring just wanted to put that in there cuz a lot of people have been wondering why we turn the jars upside down

Makes perfect sense to me. My Mom used wax but I only saw her doing Jam once. It was a lot more work.

I was taught by my Grandma and have been doing it like you for 40+ yrs except I cook my fruit first and then mash makes a soother jam. It works great.
That’s how I make jelly. I might do the upside down seal. After reading your comments and seeing so many people do it that way to, I might make the switch from water bath sealing
I make my jam just like you. I don't know how long you keep them tipped upside down, but I keep them this way about 5-10 minutes just so it naturally heats up the tops and seals as it cools.

I can the same way as you do for anything acidic. It was the way I was taught, and never hurt anyone. You just need to work fast and keep things clean. Well done on teaching Maggie so young! 👍
Yum, looks great. Mom used to make jelly's and preserves when we were kids in the 60's. A lot of hard work but worth it. little Maggies facial expression was the max!

My mom always used the wax we didn’t grow them but at least twice during strawberry season we would go to pick your nothing better than that strawberry jelly

I don't do my jams and jellies by the book either. I've been doing it this way for fifty years and have never had a problem with anyone getting sick or the product going bad. Like you said "do what works for you"

Great video! I have the paper directions from Low Sugar Sure Jell and for strawberry jam it calls for 6 cups of crushed strawberries and 4 cups of sugar. The regular Sure Jell calls for 7 cups of sugar.

I let my berries set over night in the fridge with 2 cup's of the sugar and it pulls out all of the delicious flavor

The jam looks delicious! I have made jam and jelly using the upside down method and water bath canning. The upside down method is no longer recommended but I've never had it fail me whereas the water bath method has a couple of times. Nothing like gifting a beautiful jar of apple butter to someone and finding your own jars moldy 😢 an apologetic phone call to find that theirs was also bad! 😩
I use to make it like you do. Always turned jars upside down also. I don’t remember it needing so much sugar, but I’m sure it did because I used surejell . So cute how your daughter Loves helping you, and you have the patience to allow it. I know your kitchen must have smelled delicious! I was thinking how your chickens lived those scraps.
Love strawberry jam! I have 3 gallons of strawberries waiting on me. Everyone is different in what they do, and that is a good thing. I am different in that all of that foam goes into a bowl and we eat it on a buttered biscuit or put vanilla ice cream on top and eat it, its also good mixed into milk. Love seeing Miss Maggie helping Mama, brings back happy memories!

I really enjoy your channel. It reminds me of growing up in the Mississippi delta. We had chickens and hogs. We didn’t have cows. Some of my parents friends had cows and i remember Mom churning butter. We always had a garden too. Everything had a much better taste back then.

Idk if you have access to figs, but I make strawberry fig jam, 3 cups of mashed figs that I peel some of the skin off and remove stems, I box of strawberry jello and 3 cups of sugar! Bring to a boil and cook 3 mins put in hot jars screw on hot lids and rings, tastes just like strawberry jam
One thing about using pectins: I've found that I sometimes have to let things boil about three minutes instead of one. Especially when I'm making jellies that don't have natural pectin in them, like flower jellies. I don't know if it's altitude or whatever that causes that.
This is how my family did there jams and jellies. I remember well my Momma doing hers that way.
I used to turn the jars upside down. But when the lids started changing, they wouldn’t all seal. So I started water bath processing for 10 min. Have you ever made dandelion jelly? It’s delicious! (P.s. the foam is my favorite part 😂😂)

I now use Monk fruit sugar substitute and believe me it tastes just like sugar, VERY Good.....Sugar will kill a person, I have done a lot of research on sugar and will never use it again.....I use the monk fruit for my iced tea and cannot tell it ain't sugar, I Love it, no calories and not harmful for your insides.....You can Can with it..... 7 cups of sugar YIKES..... Love your channel

That is how my sister and I also do our jellies. I love home made jellies. I love that you are teaching the next generation to can. This past year, we taught my son and daughter in law to can. Both water bath and pressure canning. It is a dying art. I love to see your family working together. My kids (all grown adults now) came and helped me finish planting my garden. It was a great day.
Looks delicious! I use sure gel as well but I do the freezer jam. I may try your way because the freezer jam gets moldy pretty quick as you’re using it. So good to see you again! Your little helper is a good one!
