    we cook the ears(boiled in salt) with fried tofu in a vinegar soy sauce dip which we call tokwa't baboy in the Philippines...yum with a congee or as a side dish with beers....

    jowl also called chawl but jaw must be cracked off and scooped outboth sides together including the toungue ,tonue removed and any chips of bone then boiled pressed and add gelaitine for slicing .

    Hog head cheese is made from the head of the hog, and the tails, ears, and ears are boiled after being seasoned and is good.

    When we slaughtered hogs or cows they was put on a band saw and cut into quarters and put in the walk in freezer on meat hooks so the meat would be stiff before we took them out and used a band saw once more to cut the meat up into steaks, pork chops, ribs, etc. Having a very sharp knife was always important when working with the cutting of animals, especially when skinning a cow, or shaving a hog which not all the hair didn't come off, especially around the head area.

    You don't need a bonesaw to cut off the head. It's easier to cut right at the base of the skull between the the skull and the spine. nothing but tendon there.

    That hog is already cleaned, but I use to work where we killed and boiled the hogs that size in a 55 gallon barrel with boiling water and the larger hogs had to be put on a platform and put croakersacks over the hog and pour the boiling water on them, but we had to shave the hair off parts of the hog, which required plenty of knife sharpening.

    The chef did not cut the belly out correctly. You normally sheet it off the ribs and get a nice rectangular piece for bacon.

    Shouldnt need any gelatine at all added. Commercial gelatine is harvested from pork and beef bones/hooves.. There's a tonne in the cooking liquor. Just reduce the liquid down to a third or less and itll set up. You have way more liquid than you need when making brawn, no matter how much you reduce it.

    actually expertly butchered the "cheek" is just a small 3-4 inch muscle but the jowl in its entirety with glands cleaned off and trimmed is a much more robust "group" of muscles with A LOT of fat around the bottom jaw all the way to the eye. guanciale ;-)
