    I’ve been a home butcher of everything on the farm, rabbit to beef and of wild 😜 fish to elk well over 40 years; you Sir are a joy to watch, knowledge of animal structure and beautifully clean carcasses (some hunters drag in and eat buckets of indistinguishables along with the mud the blood and the beer) have you cuts looking larapin as we say out west. Thank you for the tutorial, lamb is one of my favorites.

    @@joelthebutcher thank you Joel. I don't have a preference. At home we do some butchering, it's mostly self-taught and how I remember my grandfather doing it when I was little. So seeing an entire breakdown like this is always helping me with the learning process

    Why the use of the bandsaw for everything. The meat is full of bone dust which is not adding anything to the quality of the meat.

    Why doesn't lamb fat render e.i. kidney fat? How can you utilize it? And all the trimming in the bin? What happens to that. Dog food?
