Today we have for you the most in-depth Business of Chocolate episode to date. We filmed this episode back in 2020 in the midst of the pandemic. It was a precarious time and we were analyzing the numbers of our business more closely than we ever had before. In the beginning of Manoa Chocolate this is not something we always did, and so we suffered more than we had to. Analyzing the numbers of your business and setting target numbers years in advance adds a necessary clarity on where to improve. This way you can avoid surprise expenses that could be detrimental to continued growth year after year.

Hello Dylan, I would like to thank you for the very informative videos on chocolate making. We are planning to start a small chocolate factory in Lebanon with a capacity of about 150 kg/day, thus it will not be feasible to buy beans and go through the initial processes of roasting to winnowing. Instead we intend to start by purchasing the ingredients such Cacao powder, butter, sugar etc... Would like to check in such case if the Conching process is still required.
Found one of your videos at random and was stocked the factory is where I live how random!! I will definitely stop by and get some chocolate keep posting!!

You should really be splitting your streams at distribution e.g. $2.50 - $3.50 if they are wholesaling and $7.50 if they are going to be retailing and looking to do events based experience packages to your largest retailers regions (or in conjunction with them depending on what is most lucrative) both domestically and non-domestically. After which looking to expand out and take over the retailing / wholesaling sector centrally.

I'd like to go into some cottage industry business with craft chocolate bars, mainly with cocoa butter, no roasting of beans at this stage. I am trying to see my breakeven point. Thank you.

so I have a question am looking to start out making chocolate from my house and can't afford all the machines would it be ok to just start with cacao powder instead of beans? I would later on use beans just starting out real small

NO! Cacao powder is already processed and has most of the cocoa butter extracted from it. It's not the same as using beans. Even if you are super small, you still need a melanger to get a fine enough particle size. They start at around $250 (really affordable as chocolate equipment goes).

No, any powder is still not fine enough, you still need a refiner/melanger. And remember, you still have add sugar, and you need to refine that down in the refiner/melanger as well.
