The Bulgarian National Dish | SHOPSKA Salad

It's about time I made the national dish of Bulgaria, since I'm from there. To me this is one of those dishes that just carry the spirit of summer. Every bite carries memory of sun, joy and childhood. Although it is very emotionally loaded for me, you should give it a try, because it is just a fantastic salad :) Enjoy!
Ingredients:
2 large tomatoes (optionally peeled)
1 cucumber (peeled)
3 sweet peppers (roasted)
1 small red onion, or half a medium
1 cup Bulgarian cheese (alternatively, feta, or any white, salty and crumbly cheese)
Parsley, sunflower seed oil, red wine vinegar, salt to taste

Funny, in Danish white onions are called ‘salad onions’ 😂 Love it when you bring out the Bulgarian recipes ❤

Love this! Minus the cheese... I make this same salad a lot! Either as is or add to some spring mix salad lettuces.
