The Best Way to Freeze Food: Longer Shelf Life and Rapid Defrosting

Freezers are great for long-term storage, but they're only useful when you can defrost food quickly with minimal loss of quality. So what's the secret? The key for better quality frozen food is to minimize the time it takes for your food to freeze and defrost, which means freezing flat to maximize surface area to volume ratio.

Man... I decided to start eating healthy about 3 years ago. I had no clue it would evolve into one of my most involved hobbies, preparing everything from scratch, cutting up and weighing out portions of produce and meat, stocking weeks worth of food at a time. Never in a million years would I of guessed this would be something I'd ever be interested in, but damn I've been enjoying it the last few years. Thanks to channels like these, I've learned so much.

Excellent tips! I especially like the your method of pushing out the air in the flat packs at the last corner and the defrosting on aluminum trays.

Great video. I'm a bulk buyer and cook. So items stay for longer periods of time. So for this reason I'm a big fan of my food saver vacuum machine. I can keep meat up to a year without any freezer burn. Its a big investment in the beginning, but I think it's worth it.

If you freeze in a deep freezer rather than a frost-free freezer, meat and most other products will last not only for a year but literally forever.

great tips! you can squeeze out the air by slowly submerging the bag in water, too. not sure how difficult it would make it to spread the meat out evenly though. maybe you could spread it out first, and when you're about to finish, submerge it and seal it up, making sure no water leaks in. that way all air pockets in the meat itself would get removed.

I’ve been doing the flat pack method for years now. It allows you to break off only as much ground meat/soup/sauce/stewed beans/rice or small pasta as you need. If you’re not comfortable having the bag stand on its own, put it in a two-cup measuring cup and fold the excess over the lip of the cup. This not only makes the bag sturdier, it also makes sure the bag is only about half full.

I usually give my food in the ziplock bag a little fold over with the slack on bottom and the food on top, that way the weight of the food itself squeezes out all the air. No need to massage the air out.

Squishing ground meat too much can make the meat/texture tough (kind of like over kneading wheat dough), the proteins get tightened and tangled. So, I'd try to flatten the bags of ground meat with as little hard pressing as possible.
