The Best Simple Comfort Food Classic: Chicken and Stuffing Casserole Recipe

Welcome to "Cook it Simple with Eric"! Today, I'm sharing a simple, delicious and comforting recipe for Chicken and Stuffing Casserole that's perfect for any occasion. This easy-to-make dish combines tender chicken, savory stuffing, and a creamy sauce, all baked to perfection. Add some veggies while you're at it!
My Mother used to make this dish for 4 of us kids and we always loved when she did. It's a fairly inexpensive dish and this recipe can easily feed 4 people. You can eat this as a main course or add some mashed potatoes on the side to double the comfort food factor. Enjoy
Ingredients:
1 lb. chicken breast (cubed about 1 inch)
1 10.5 oz can of cream of chicken soup
1/2 cup of milk
6 oz box of stuffing mix
1 1/12 cup of warm chicken broth
6-8 oz of mix veggies (I use frozen peas and carrots)
Salt, pepper and garlic to taste
Instructions:
Preheat your oven to 375 degrees F.
Cut the chicken breast into roughly 1-inch cubes and set aside.
In a large bowl, add the warm chicken broth to the stuffing mix, mix by hand and set aside for a few minutes to allow the broth to absorb into the stuffing mix.
In a large bowl, whisk together the cream of chicken soup and 1/2 cup of milk then add the veggies and stir together.
In a greased 11x7-inch baking dish, spread the chicken evenly.
Add the soup and veggie mixture over top of the chicken and spread evenly.
Fluff the stuffing mix with a fork then top with the prepared stuffing mix.
Bake for 35 minutes covered then an additional 10 minutes uncovered, or until the top is golden brown and the casserole is heated through.
Let it cool for about 10 minutes before serving. Enjoy!

    Add this to the weekday rotation! Great simple recipe with perfect seasoning that brings comfort of Thanksgiving in 30 minutes. Even your kids can make this dish. But they will skip the vegetables every time. 😊

    I was really impressed with how this turned out. I had made a variation of this in the past that wasn't as tasty as your recipe. I did make a few changes, I used a rotisserie chicken which you said was an option, added half a can each of corn and green beans and small can of carrots instead of your frozen vegetables and used the broiler at the end to make it a little crunchier. Definitely making it again! Any chance you will be making a Salisbury steak anytime soon?

    Looks amazing, will make. Question tho, is it really necessary to not mix the chicken in with the gravy/veggie mix? Also, could you use sour cream instead of the milk?

    Great question! I don’t see why you couldn’t do all of that. Mixing the chicken in would save a step. I know some recipes I’ve seen, sour cream is used. I would make the dish your own way and make it your recipe. Thank you for watching! Enjoy.
