The BEST Macaroni Salad
The BEST Macaroni Salad #OldCountryCooks
Ingredients:
8 oz Macaroni Noodles, uncooked
1/4 cup Sweet Pepper, diced
1/4 cup Onion, diced
1/4 cup Celery, cut in thin strip and thinly sliced
1/4 cup Cucumber, peeled, deseeded and diced
1/2 cup Cheese, grated (we used parmesan and Italian)
3 ea Eggs, boiled and diced
3 ea Bacon strips, finely chopped
8 to 10 tbsp Mayonnaise
2 tsp Yellow Mustard
2 tsp Vinegar
1 tsp Black Pepper
Instructions:
Cook macaroni to box instructions. Then rinse with cold water to prevent over cooking and let drain well. In a large bowl add the macaroni, cheese, bacon, eggs and all the vegetables. Mix well. In a separate bowl add the rest of the ingredients. Mix well. Then add to the macaroni mixture. Mix well. Enjoy!

My Mac salad is always kind of boring. Pasta, eggs, mayo and mustard. But think next time I’ll add bacon and cheese. I’d add veggies, but you know Jessie doesn’t like them 🫤 I make my potato salad same way as I do my Mac salad too. I will have to try adding cheese and bacon to it too! Thanks for the recipe.

Excellent idea on making the dressing on the side and taste testing before you put it into the salad. I’m going to be quite honest with you all… I love macaroni salad. But when you added that bacon to it, I just about fainted! That alone would put this over the top in my opinion! Great job guys
