😋 BBQ Meatloaf RECIPE:
Ingredients:
1 tablespoon unsalted butter or MCT oil
1 medium yellow onion, chopped
1 teaspoon fine sea salt
2 large eggs
2 pounds grass-fed ground beef
½ pound ground liver (or ½ pound more ground beef)
1 cup finely chopped button or portobello mushrooms
¼ cup tomato sauce, homemade or store-bought
2 teaspoons liquid smoke
½ cup nutritional yeast (or shredded extra-sharp cheese if not dairy sensitive)
8 slices bacon
1 recipe Keto BBQ sauce or Stevia Sweets BBQ Sauce (about 2 cups overall)
Directions:
1. Preheat the oven to 400°F.
2. Melt the butter in a heavy skillet over medium-low heat. Add the onion
and salt and gently cook for about 20 to 25 minutes, until the onions are
golden. Remove to a bowl to cool.
3. In a large bowl, combine the eggs, ground beef, ground liver, mushrooms,
tomato sauce, liquid smoke, and nutritional yeast. When the onion mixture
has cooled so that it’s not hot to the touch, add it to the bowl and
work everything together with your hands.
4. Place the mixture into a 9-by-5-inch loaf pan (or you could make individual
servings in a 12-cup muffin pan). Cover the meatloaf with the bacon
slices, tucking the bacon ends underneath the meatloaf so that they don’t
curl up during cooking.
5. Bake for 1 hour, until the juices run clear. Let the meatloaf rest for 15
minutes. Serve with ketchup, barbecue sauce, or tomato sauce.

Keto BBQ Sauce Recipe:
Ingredients:
2 cups zero sugar Ketchup (Primal Kitchen)
¼ cup powdered erythritol or 1 teaspoon stevia glycerite
2 tablespoons coconut vinegar or apple cider vinegar
1½ teaspoons liquid smoke
½ teaspoon onion powder
½ teaspoon garlic powder
½ teaspoon fresh ground black pepper
⅛ teaspoon fine sea salt
Directions:
Place all of the ingredients in a large bowl and mix well. Store in an airtight
container in the refrigerator for up to 2 weeks.

Love watching Kai prepare the meal and eat. Looking forward to when he is a young man doing these cooking shows with his mom.
I love meal prep. You get all your stuff together and see that it will make several meals....take out the freezing containers. You make your life easier for several meals. I use pork rinds in my meatloaf.

Your Italian meatloaf is one of my favorites! I always also winged a BBQ version but just made it the same as the Italian except for subbing BBQ sauce and cheddar cheese for the pizza sauce and mozzarella. I'm also a fan of your Stuffed BBQ Meatloaf. Now I need to try this one, too. I'm a big fan of all your meatloaf recipes - your Cordon Bleu one is a yummy one, made with either beef (as written) or ground chicken. The other day I found a recipe of yours for Gyro loaf that I'm dying to try! My absolute favorite cookbook is your Keto Comfort Foods and I've made pretty much everything in there and somehow I'd swear I've never seen the Gyro Loaf! 😂 One of the things you said in that cookbook that changed my life was that you and your family loved ground beef and would just as soon have a half cow all ground into burger as broken into roasts, etc. Obviously, things have changed. But it was very freeing for me. I had been having digestive and food aversion issues and the one thing I always liked and wanted to eat was ground beef. I had been sort of embarrassed and self-conscious about it since a friend noticed snd commented. (She wasn't being rude - I had changed from someone who loved variety to eating ground beef or sausage all the time) You made me feel like it was perfectly acceptable and I thank you for that. I, too, have moved on and eat a variety again, but still have ground meats often. I haven't been online as much lately and missed that you'd been sick. So glad to hear you're better! I had noticed you weren't on camera as much and just chalked it up to worry about your Hawaiian home. Finally, hope you had a happy birthday 🎉🎉 and wishing you many happy returns of the day. ♥️

Being allergic to nightshades sucks 😢 I will try these without BBQ or Pizza sauce, I’m positive they won’t be as good though.
