Jamaican Style Oxtails Recipe: Soak the oxtails in salt water. Scrub them together and let them soak for 30 minutes then rinse them off thoroughly. Chop up 1 onion, 3 bell peppers(multi-colored) 1 tomato, scallions, and 2 stalks of celery into very small pieces. Place oxtails in a mixing bowl Add 2-3 tbs of browning & seasoning sauce, 2 tbs of Worcestershire sauce, 2 tbs of ketchup, and 1 tbs of minced garlic Massage oxtails in those ingredients Season with 2 tbs of seasoning salt, 1 tbs of ground Jamaican allspice, 1 tsp of garlic and onion powder, and 1 tsp of black pepper. Add chopped peppers, onions, scallions, and celery to the bowl of seasoning oxtails Let them sit overnight The next day place a pan over medium-high heat Add about 3 tbs of oil to hot pot Add your oxtails and vegetables allow them to fry for 10-15 minutes. Add beef broth or water or both and fill the pot to the top Cover with a top and allow the oxtails to simmer for 4 hours Stir every 20 minutes Chop up some tomatoes and add the butter beans and tomatoes within the last 10 minutes of cooking time And that's how to make Jamaican style oxtails

OMG! It is so sad to see how much criticism this young man is receiving for doing something positive. It's time that we stop criticising and tearing each other down. Encourage him, he is doing something positive. So what if he doesn't say certain words correctly. Who cares if he doesn't use gloves....He is cooking for himself and at the same time educating others who needs help in the kitchen. Moses don't speak properly but he delivered the children out of Egypt. A lot of people gets discovered on KZread. So we have to be careful who we make fun off and put down. I find his videos very informative and the food comes out tasting good. His videos are great. If his videos are not to your liking or standard, just click out and keep it moving. But don't make fun of him. It's not nice. Every professional chef adds a twist to their receipt to set themselves apart.

+Esperanza pardo For real. If ppl don't like the recipe they can move along. And I've encountered recipes that called for using non-traditional ingredients (like ketchup) and b/c they are mixed in with a lot of other things and are made of many ingredients, they can yield results you would not ever expect. Sometimes it's best to try it out before pulling it apart, bc I can honestly say that in some of those recipes you don't taste the ingredient you find odd yet without it, they won't work. This is a way he's found to recreate a certain taste, and I'd definitely be game to try it out.

the best browning to use when cooking oxtail is "Grace Browning" made in Jamaica. And also to prevent your eyes from tearing wash the onion before chopping, cut the onion in half and wash. While cooking the oxtails make sure you have some hot water on the stove in another pot so that you can keep adding water to the boiling oxtail when needed. Also fresh thyme is a most.

I flour my oxtails prior to frying because it helps to thicken gravy and it also locks in the flavor and juices of the meat.

Alma Dredge them in flour the same way you would fry chicken, before you put them in the pan or pot you're cooking in just make sure to cook all the flour out, raw flour is not good for you
