Jamaican Style OXTAILS Recipe: Ingredients 4 Lbs Oxtails 6 Scallions, chopped 1 Tomato, chopped 1 Small Onion, chopped 1/2 Medium Red Bell Pepper, chopped 1/2 Medium Green Bell Pepper, chopped 1 Scotch Bonnet Pepper 2 Tbs Olive Oil 1/3 Cup All-Purpose Flour 3 Qts Water (2) 16oz Canned Butter Beans 3 Tbs Browning And Seasoning Sauce 3 Tbs Worcestershire Sauce 3 Tbs Ketchup 2 Tbs Minced Garlic 2 Tbs Salt 1 Tbs Garlic Powder 1 Tbs Onion Powder 1 Tbs Thyme 1 Tbs Brown Jamaican All Spice 1 Tsp Paprika 1 Tsp Black Pepper Instructions 1. Place oxtails in a big bowl. Add 1 tbs of salt and cover with cool water. Let oxtails soak until they defrost. 2. Chop up your peppers, onion, tomato, and scallions. Then place the chopped vegetables along with the minced garlic into the food processor and blend until fully minced. 3. Rinse oxtails off and place in bowl. 4. Add worcestershire sauce, browning & seasoning sauce, and ketchup, then massage in well. 5. Add salt, garlic powder, onion powder, thyme, ground Jamaican allspice, paprika, and pepper. 6. Add paste/seasoning and massage in well. 7. Place in refrigerator to marinate for 5 to 8 hours. 8. After 5 to 8 hours, remove seasoning from oxtails. 9. Add flour to oxtails and massage in well. 10. Place a pot over medium heat. 11. Add olive oil and oxtails to the pot. Stir as they brown for 8-10 minutes. 12. Add seasoning. 13. Add scotch bonnet pepper. 14. Add water and cover with lid (make sure to leave a crack on the sides). Cook for 3-1/2 to 4 hours, stirring every 20-25 minutes to prevent sticking. 15. Once done, add butter beans and stir in well.

I don't cook so much anymore so about 18 months ago I gave up cooking shows. I was at an Asian grocer and found beautiful oxtails. I bought them not knowing how to cook them. When I decided to give it a go I remembered that guy from Philly that I used to watch and loved everything that I copied from. So glad I looked you up again. Another winner!

This is my go to recipe for over a year now. No fail and perfect everytime. I season over night then brown off and slow cook in my slow cooker on high for 3 hours (or if I'm going out i put it on low until I get back. Then I reduce the liquid on the stove for 20-30mins. I don't use flour at all. I have just prepared this to cook tomorrow. Thanks for this. It''s a delicious perfect recipe. God bless.

But if you used the flour, you wouldn't have to reduce the liquid on the stove. Or, if you just don't want to use flour, you can make a corn starch slurry and add that to the slow cooker to thicken the sauce.

Hi @@josephinenguyen22 I use about 1-2 cups of water only. It will produce it's own liquid. I dont use flour to reduce the calouries in the dish as oxtail is already quite fatty. X
