You are so right about infusing the oil. I do a russet potato 🥔 that's coated in cornmeal after the "roughing up" step. They get so crispy!

This is really the best way to get roasted potatoes - in a pinch - you can cover the potatoes with oil and shake a packet of dry Ranch Dressing Then bake in oven - they turn out very yummy 😋

Hey Laura! Thank you so much for this simple yet delicious recipe. I made them along with roast chicken and it was a hit! Since I’m Indian I added a bit of chilli powder but it was definitely the best roast potatoes. The crunch was amazing!

The "lots of surface" is what my Greek yiayia taught me as well -- especially for crispy Greek lemon potatoes. I loved the helpful lesson on potatoes you gave-- you are so in-tune with your cooking. 💝💝

I love it, but I've been finding it difficult to cook it for myself

I found it’s more flavourful when I put garlic in the water when you boil the potatoes

I was in love with this recipe when I saw it this evening.. and the thumbnail is so appealing.. tried it for dinner.. it's amazing.. I used the garlic used in the oil (half butter and half oil) while roasting the potatoes, it was aaaaaamazing.. 😍
