    I make this crispy pork, it takes 3 days to prepare as you use rice vinegar and salt to dry out the pork skin in the fridge prior to frying. My take away from this is using the bamboo sticks to seperate the pork skin when frying, that’s going to improve the separation of the skin. Thanks for that!

    @@somethingscookingasia No problem Johnny & Som, if you want more detail I can give you the whole process as you rub the belly with the rice vinegar and apply heaps of rock salt onto the skin side only, then wipe it off after two days, then marinade the flesh side in a special sauce for a day without getting the skin wet. Each shop or stall has their own secret sauce, that’s the difference. They fry the first fry off site as it can splutter and the BMA don’t like that on the concrete!

    You know when they deliver the crispy pork in a Mercedes they must be doing something very right. Will visit them on our next trip, it's not too far from where we stay in BKK.
