I have to try this recipe next. My son and I made honey walnut shrimp and it's the best and authentic recipe for sure out there. It's so great to find a real chef that cook authentic Chinese food. I grew up eating Chinese food most of my life. My kids love it too!

Pork benefits from its particular marinade the most, so keeping the pork marinade concentrated with the pork, is better than spreading the flavor out over shrimp and green onion, which may absorb some of the flavor which would have tasted best with the pork. By keeping the ingredients separate until ready to wrap wontons, you can ensure that eating it, even though it's very little meat, you can taste the different things that went into it. Especially with shrimp, this is a pleasant experience.
