    3 of the greatest things that have made home cooking a joy.....The Pellet grill and the Kamado grill and last but not the least, the air fryer. It's amazing what you can do with one..Thanks Sam for another nice day in the backyard in SD....And, I don't mean South Dakota..

    I grew up with the fries soggy from the malt vinegar, and real British style fried cod. Didn’t realize how fortunate I was at then time. Looking forward to tracking down the malt vinegar powder!!!!

    I just got an airfryer and i am trying all sorts in it, such fun to be honest. the oild from deepfryer goes back in the bottle it came from (once cooled and old) then it goes to collection bin as they reuse it for biofuel

    I add old bay seasoning to my fries ad a table spoon of corn starch for cruch, for the fish. I'm old school, use corn meal or Louisiana fish seasoning. 😊

    I still recommend seasoning the protein before breading uses less seasoning and gives more flavor, but I season all stations of the breading

    I do too. Season meat, season flour, season crumbs. I don't have to go overkill on the seasonings, but they're definitely in all three "dry"stations.

    Next time your in England you need to try fish and chips from a coastal town. So much fresher: I recommend seahouses in Northumberland. Then after that travel a little north and you can visit Bamburgh castle. Great day out. Great episode also!

    Sam I love your videos! A little tip, if you add a tbsp of vinegar to the boiling water you pour on the potatoes it will keep them from browning so much when fried 👍☺️

    That's a great looking tarter sauce and a variation of how tarter sauce is prepared because traditionally tartar sauce is made with capers and the more common American version of tartar sauce is made with gherkins however the rest of the ingredients you used were correct except for the dill as normally parsley is used

    I used WHITING fish and added CRUSHED FRENCH FRIED ONIONS into the bread crumbs 😮😮😮❤❤❤ so good made the best fish tacos

    Epic Fish and Chips next level here! Next time try some Waffle Fries, Tater Tots, and Strip fries. Tried it the other day just a mix of all the kinds in one spot. Frytastic. Love the fish. My kids are into Salmon lately. Been trying all kinds of ways to cook it. Salmon belly fish and chips sounds amazing.

    When it comes to doing fries in the air fryer, I have a tip: You put your fries in a Ziploc bag, and you then spray some cooking oil spray inside. You then add your seasoning for your fries and seal the bag. You then give them some gentle shaking to get everything coated. This helps to give the fries a light oil coating, and good spice. I usually just salt and pepper. Then, you cook in the air fryer as you would. I get my fries nice and crispy, with little oil, and already seasoned (⁠ ⁠◜⁠‿⁠◝⁠ ⁠)⁠♡

    You said in this video you need bigger pans to dredge so you don't make a mess, I have an idea for you! I just use inexpensive small aluminum cake pans. The sides are taller , therefore minimal spill over. I don't mean the disposable ones, (they would work too) I mean the kind you can wash and reuse.

    I have an air fryer, one where a paddle very slowly stirs the content. While it works well for some stuff like fries and cocktail sausages it's not that great of a thing to own. It's bulky and takes longer than using an oven. And it's easier to use a fan oven most of the time and it's just doing the same thing.

    I'm gonna need to hijack this top comment to save Sams frying life and all of yours. Get. A. Double-Door. Air-Fryer. The egg shaped ones are terrible and I honestly can't even consider them air fryers. The nice convection ovens with an air fry feature is much better since it's much more spacious and you don't have to worry about covering the holes on the bottom like the egg shaped fryer

    In mid 70's a 4 finger lid was 10.00 in So Cal (16 oz in a Lb, made for a nice profit and happy friends). Shoe box lids were key for cleaning stems and seeds. Oh, great method for fish and chips. I'll try it. Cheers.

    I'll 2nd those facts from the '70's. In Texas, same exact thing. Same lingo too. (Sam, you'll probably have to explain to MAX what "lingo" means!) Isn't it cool that you William Parker were in Cali, me in Texas, and Sam in Canada, were all using the same words - WITH NO INTERNET influencing us! Ha! It was universal. So yes, Max- It WAS measured in fingers. There WERE seeds & stems. The baggies had NO zip lock. It WAS FUN cleaning the stash. AND Those of us who were so inclined, GREW those seeds in the closet with a light bulb. Maui Wowie anyone? Columbian Gold? And there was paraquat too. But, that's a whole other can of worms!

    @Paul Opera You guys in New Yotk really had those denominations down! I'm guessing they coincided with the price, at least originally? So that would mean 2 fingers = a dime, was $10. right? Which would have been a half ounce. Ten bucks for a half ounce would have been expensive to us! And we only would pay that much for something out of the ordinary. Maui Wowie anyone?!! We didn't really use all those denominations, but I had heard them occasionally. Except, for us, a lid was the same as an ounce, we also called it "a bag". And yes, it was 4 fingers. So a half ounce was 2 fingers. There were no zip locks, or closures of any kind on the baggies, so you had to roll it up, and keep it that way during transport. AND keep it hidden too!! (What's that in your pocket? Is that a lid, or are you just happy to see me!) Usually, we kept that bag in our sock. Big bell jeans were handy that way! BTW- who could forget Earth Shoes!! And if there were excessive seeds, and mostly shake, the price was a bit lower. The number of buds in a bag always varied, and the buds usually had a bunch of seeds in them too, which we just overlooked. (And planted! But then we weren't gardeners, so that rarely worked out.) And the REALLY GOOD STUFF had nicer buds that were fatter, more dense, colorful, and juicier! By juicy I mean they had those nice sticky trichomes in them, with hairs! And any weed that had multiple colors was a treat indeed! Columbian Gold is one I remember well. Different strains had different smells. Did anyone else spend long periods of time staring closely, with admiration, at a colorful juicy bud? Or was that just me... Shake was loose leaf & stems. And the standard size fingers used to measure were average size guy's hands, not small girly hands, not extra large man hands. Some people used to carry around those little pocket weight scales to measure an ounce when the time came. Somebody always had a roach clip either on a necklace, or a key chain. But if the cops found any of that on you, then they would hassle you more. Remember, everything was illegal back then, so you wouldn't want to buy anything from a stranger, bcuz they could easily be an undercover cop. We also got pulled over A LOT, just bcuz the guys had long hair. Or even if there were just multiple teenagers in a car. Then they would automatically search the vehicle. It didn't seem like they needed a legal reason. God forbid if you had a tiny roach ⅛ of an inch long in the ashtray from 2 weeks ago (that had been forgotten) because it was just papers anyway!! If they found THAT, then we were in for a few hours of being searched with a fine tooth comb!! Searched everywhere except taking off our clothes! One time when we were cruisin around the lake on a friday night, we got pulled over because the cops saw a cherry glowing as someone took a drag off their cigarette as were driving by them!! They said they "could tell" it wasn't a cigarette by it's shape! Pffffthhh!! Whatever!! I mean, it was pitch black outside, and inside the car too!! Those coppers, they must've been really bored bcuz they were just sitting there staking out the main drag at the lake, just looking for some teenagers to hassle! And to tell the truth, the only reason we were there is bcuz we were bored too! But, I digress... Back to the measuring- It was a system that mostly seemed universal, and worked extremely well ! Ahhhhh, the seventies... Good Times!

    Sam, up here in Santa Barbara they've been running radio commercials on how to properly dispose of waste cooking oil, they tell everyone not to pour it down the drain, once the oil has cooled down they recommend pouring the used oil into empty water bottles and throwing it away in your trash. Years ago I used to live in farm country with gravel roads, I would take the used oil and pour it on the gravel roads, it would soak in and help keep the dust down, however, today the police could charge you with illegal dumping.

    Tartar sauce is made with mayonnaise, chopped capers, gherkins and Parsley, Not Yoghurt. Plus Paner à l'Anglaise (flour, eggwash and bread crumbs) is for deep frying, dip the fish in melted butter then bread crums for oven or grilling (dry fryer).

    It’s funny to me how tartar sauce is so popular or normal with fish n chips. Being from the UK originally that was not a thing. Fish shop curry sauce, or mushy peas is the norm over there.

    Tried to do air fried beer battered fish and did not pan out. I think the batter is too runny to air fry but this way looks bomb.

    Okay, y'all, outside opinion. I made the tartar sauce up and OMG 😲 it's so delicious and nice and thick and creamy! I don't have any potatoes 😕 but I have cod here 😋 Thank you Sam! The amazing sauces I have gotten from your channel, they alone are worth making. Great video guys! ❤

    OK, let me see. The 3 pans have the following in them (according to the video): Dish 1: 1 pound of flour + 1 pound of corn starch. Dish 2: one dozen eggs. Dish 3: 1 large bag of Panko. This is what I guessed according to the picture in the video. Right? The sauce was just enough for one piece of fish! I made this...and it was great! With left over flour, eggs and panko, I made an omelet for my family of 6. Just kidding............
