    The guy at the beginning of the episode dropping off produce and telling Carmy to open the sandwich window isn't an actor - he's Chris Zucchero, the owner of Mr. Beef, the real Italian beef shop on Orleans Avenue in the River North neighborhood of Chicago that the show is based loosely on (the pilot was filmed in the real restaurant). Zucchero grew up with show creator Chris Storer - the two have been friends since kindergarten. His thick Chicago accent is very real. This isn't the first time we've seen him on the show - he makes a brief cameo in the pilot episode, playing the guy who sold Carmy beef in the alley in exchange for vintage jeans and a bag of coins Carmy collected from the Ballbreaker console.

    Changing the menu every day was indeed wild. I believe that the phrase is biting off more than one can chew. Perhaps waiting until the restaurant breaks even before attempting that.

    The older French chef mentoring Carmy is Daniel Boulud, the owner and executive chef of Daniel, a Michelin-starred restaurant in New York City. He's playing a fictionalized version of himself in this episode. The younger chef in the greenhouse looking at the wall of pictures of various dishes is also a real chef - René Redzepi, co-owner of Noma in Copenhagen.

    I gather that Redzepi is one of two chefs with cameos this season who have been accused of toxic workplace behavior. The other being Thomas Keller.

    “If I was a new viewer & I saw episode 1, I probably wouldn’t watch more.” Why the fuck would a new viewer watch season 3 first? Especially in the age of streaming. Anybody who actually does that is like Jimmy AKA a sociopath. Lol

    Someone on the reddit discussions said they would want people to watch that episode first to get them interested in the show. I'm like... there's nothing in that episode for someone who hasn't seen seasons 1+2 lol

    I enjoyed it for the most part, but it really leaned hard into its indulgences, so I can get why reception was mixed.

    If you want, Justin Cana, he’s a chef on KZread. He worked in Michelin star restaurants, and has his own restaurant as well. He said that the people in the restaurant oversee Karmin they are actually other famous chefs.

    I personally loved this season 3.5 cuz it's definitely a first part overall, with some amazing moments sprinkled throughout

    This season was definitely a shift in tone and while I have some gripes I enjoyed it because I think it's necessary for the rest of the story.

    Loved episode 1 because it's like we're in Carmy's head and seeing what he's processing after the "disaster" in last season's finale. However, I agree that if they did a weekly release and we'd have to wait another week to get into things, I'd be pretty pissed too.

    Entire season 3 is a show about a soundtrack with 90% B-roll and yelling.

    Am I the only one who thinks some of Carmy's non-negotiables are perfectly reasonable? Like, why the fuck *wouldn't* you break down boxes?

    The music in the first episode sounded so familiar to me. I thought that it sounded like Nine Inch Nails. Sure enough, I looked up an article and it said that it was by Trent Reznor and Atticus Ross. Then I realized that it was not (originally) made for the show, but was from one of the Nine Inch Nails "Ghost" albums. It is called "Together" and it is around ten minutes long. I think Reznor and Ross remade it for the show.

    I wasn't really feeling this season. The cinematography was still on point, and there were definitely some great moments here and there. But overall it felt way too up its own ass, and like the writers have lost the plot, both figuratively and literally.
