I think the fact that he is just a totally normal boring genuinely nice guy is why he gets so much shit from everybody, because Carmy's family and friends all come from pretty messed up childhoods and home lives. Without really giving anything away, you'll eventually see exactly why Natalie gravitated towards someone like Pete.

Can't speak for every chef but the reason why I hate brunch is because people who attend brunch are the pickiest eaters ever. Turns out there are a million different ways to prepare eggs and they get cold fast, so if things go wrong on expo you tend to get them back and have to redo them. And things usually go wrong on expo during brunch because the kitchen brigade and servers usually had a long night out with lots of booze after a stressful Saturday night dinner rush.

Also if you've ever worked in a restaurant that serves alcohol, you know brunch is an excuse for some people to get drunk before noon. I don't have to tell you how pleasant guests can be if anything goes wrong, and that is made several times worse when they're 10 mimosas in

I consider myself a foodie, and I eat basically anything - pig's head, cod eyes, bull's testicles, you name it. But never eggs. Fucking fried eggs, boiled eggs, I don't care about them - tastes horrible and sulphurous. If you're an egg person, I will look at you differently for the rest of my life. Happy buffet youth type persons that eat eggs are on my watch list.

I think what happened with the pills is that Carmy wasn't paying attention after he cut up the fruits and just scooped everything on the table into the jugs for the ecto cooler. Not just the younger and wittier version of herself; Tina had no formal culinary education, and it must've taken her forever to learn how to work in the kitchen and earn respect, whereas Sydney went to the CIA and had a long and impressive resume, and then she was made sous within a week. It's understandable that Tina was sour about it, but once she realized Sydney wasn't looking down on her and wanted her to be better for the sake of the team and restaurant, she stopped antagonizing Syd.

“Actually, I’m kinda into it” It was definitely Carmy accidentally throwing the bottle in there, we’ve seen him space out a couple times already in the first few episodes. I’d imagine his brain just said “orange” and he grabbed the nearest orange object and chucked it in without checking. As for my hot dogs? Always mustard, but I’ll usually add some combination of cheese, jalapenos, and onions too.

  • @lunaloutfy

This was such a lowkey and carefree episode. I really enjoyed it because it slowed things down for a bit and gave us more insight about the characters. Especially why Tina is the way that she is! She’s been in the kitchen far longer than Sydney ever has, and it makes sense why she felt no longer appreciated or needed because there’s someone newer and younger taking her place and changing her traditional system. However, I think that this episode was a huge game changer for her because it opened her eyes to something that will allow her to change her ways and become more open in exploring her options and broadening her horizons as well as accepting the changes coming her way! Loved this reaction ❤️❤️ Edit: To answer your questions, I like to put ketchup and BBQ sauce on my hotdogs! I also love adding caramelized onions, some chips for crunch, and melted cheese, of course. As for donuts, I prefer the standard sugary donuts and cinnamon caramel ones! (That one is basically a regular donut that either has the melted caramel on top with cinnamon sprinkled on it, or if you open it up, the caramel just oozes out from inside of it)

There's a professional chef that reacted to the Bear here on YT, focusing on the food industry aspect. He basically says that saturday night service is the most hectic of the week, most of those people don't get out till after midnight. But for most places that have sunday brunch, that same back of house crew has to come back early sunday to prep for brunch. And apparently many people who frequent brunch are picky, if not outright PIA. lol

A super important point here: Richie is never wrong, but he has such a crap history that everyone assumes that he is. Richie didn't leave the pack of cigarettes in the kitchen. He didn't stuff the oily rags in the uncaulked vent (a Mikey jerry-rig). He didn't miss the phone call from Cicero's tenant, because they had the wrong number. He MIGHT have messed up with the Xanax. But all Richie did is take one, and put the bottle down, whereas Carmy is the one who handled all the Ecto-Cooler punch prep and has a track record of panic attacks and losing track of crucial details in the last few episodes (the cigarettes, the frozen food, when he panicked and fled to the Al-Anon meeting).

About brunch, Anthony Bourdain said it best: "Remember, brunch is only served once a week, on the weekends. Buzzword here, 'Brunch Menu'. Translation? 'Old, nasty odds and ends, and 12 dollars for two eggs with a free Bloody Mary. . .[B]runch is demoralizing to the serious line cook. Nothing makes an aspiring Escoffier feel more like an army commissary cook, or Mel from Mel's Diner, than having to slop out eggs over bacon and eggs Benedict for the Sunday brunch crowd."

Think about working from 9am to twelve on a Saturday and having to wake up at 5 am to start prep on brunch...for a now day drunk ladies club. Yeah it's hell on earth...and Chicago doesn't do ketchup. There's a saying "if you are old enough to pay your taxes..no ketchup" fresh tomatoes only

Ketchup on a dog in Chicago is usually sacrilegious. I’m okay with it, as I always had it with a kid. Probably mustard and onion is my current jam.

I like Mayo, mustard, LOTS of diced onions, a small amount of dill relish, and a little shredded cheese. Maybe a few fritos on top. Especially an Am/Pm beef hotdog. Something about em! And i dont habitually eat hotdogs so when i do it's a treat.

The pills were next to the punch. Richie didn’t put the lid on. It wasn’t intention, it was yet another example of the chaos that’s always around them. The pills were unsupervised and the open bottle fell in.

As a longtime chef, here’s why I hate brunch: 1. Saturday is the busiest day for chefs and it’s usually a long shift. 2. After getting rocked on Saturday night, you usually go out and drink until bar close. 3. Waking up early on a Sunday when you’ve worked your b@lls off all week sucks hard. 4. Nobody wants to work that shift, so it’s a gig for the lowest people on the totem pole. It’s rife with call offs and no shows which puts everyone else in the weeds. I can’t count the number of phone calls I would get early Sunday morning ‘so and so called off’ or ‘chef x didn’t show up and he’s the only one with keys’ FML It just sucks. Working people who are already overworked.

A traditional Chicago hotdog doesn’t have ketchup. It does have a slice of tomato, which I think is supposed to take place of the ketchup.

Just for the record, onions are one of the cheapest things a restaurant can buy. Usually an onion is like 10 cents. They are bought in BULK. I hate food waste, and one time I dropped an onion when I was cutting them at Papa Johns and the area supervisor saw it, said toss it, it’s like a nickle. I thought o was in trouble because anxiety working in a toxic place.

The reason Brunch is a pain in the ass is that it’s a deviation from your menu. You spend the entire week with a set menu and Brunch means a completely different prep list for what is probably only a 4 hour service once a week. It’s a monkey wrench in the flow of prep/service harmony every week. Add to that it’s usually Sunday after the weekend insanity and is early Sunday crowd which is notoriously just the worst crowd.

Brunch for me: Having to prep some much more different courses than the kitchen generally can fit. So you have to use every square inch of flat surface and storage space to store everything. It's always a mess in the kitchen and then having to make sure that every item stays available up until the end without making too much food that then gets wasted. It's a pain.

I love eating brunch. Service? Not so much. Its the timing more than the menu, for me. Brunch is 11-2 usually and this cuts into prep for your 5 o' clock service. Its why a lot of places start at 5pm & don't serve breakfast at all. My last kitchen did a Sunday brunch that made me DETEST waffels and everything to do with them. Ill eat them, but do not ask me to make them😂😂😂

Basic Hot dog: a line of ketchup on one side and a line of mustard on the other. Then I twirl it to blend. Fancy Hot dog: wrapped in bacon and served with sliced avo. No ketchup & mustard combo needed! Fave donut ALWAYS: chocolate old fashioned that must be eaten in an orderly fashion: outer ring and then inner ring.
