I managed a craft burger and beer joint a few years back and we got an article written about us on westways magazine. We were properly staffed when the article came out and prepped heavier, we got busier but nothing crazy. The next month we didn’t know that the magazine emailed a newsletter that featured the article on us. Westways is a Costco magazine, so it got sent to every Costco member in orange and la county haha. That was the weekend from hell. We were short staffed and we didn’t have any time to prep so we were making everything on the fly. Two guys in the kitchen grinding sirloin and ribeye forming patties on top of all the cold and hot station prep, and making orders with tickets on tickets coming in. And two people up front seating tables, taking orders, pouring beer, running food and bussing. I paid regulars in free beers to help me buss tables. We had hour long ticket times. It was insane. This episode perfectly captures the chaos that goes on in restaurants when shit hits the fan. You have to try and stay composed and figure it out. It helps if you can chug a beer when you can catch your breath haha

Yeah Carmy was getting into that territory of acting like that verbally abusive chef from earlier in the season. I think he was more upset about the review than he let on at the beginning and took that out on her and the rest of them. Then Marcus wasn’t helping by working on his side project and Sydney walking out wasn’t great. The chaos had a lot of people at their breaking point. It was so chaotic. They should have just cancelled the preorders.

I feel like people overlook the part where Carmy says "I just turned on the to-go tablet, are we ready?" and Sydney says "No!" That to me means that Carmy is at fault for turning on the tablet before it was ready and the whole pre-order thing is his fault. The only thing I feel Sydney did wrong was bringing up Richie's daughter, that was just low and gross. But also, Richie did accuse her of doing sexual favors for that good review, which is also very low and gross so...I don't know. Anyways, this is one of my most favourite episodes of tv ever.

here's another aspect people don't look at. Those new customers order, they don't get their food, that customer leaves a bad review saying the restraunt didn't even do there job feeding them. enough of those bad reviews can kill a small buissness like the beef. that situation could've completely put the restarunt into foreclosure. Carmy, Syd and Marcus all had a part in that chaos. First off, yes Carmy shouldn't have lost his shit 100%, given his extreme anxiety and his panic attacks it makes sense but as a Chef, he should be the calm in the storm and not the one pouring fuel on the fire, absolutely I agree, this could've turned out a lot differently depending on his reaction. No part of me is denying his part in this shitshow. BUT, what's also true is that this new system was Sydney's idea that she pushed for and Carmy warned they were not yet ready for. She messed up, because of her mistake, shit got real hectic. If she doesn't wanna get yelled at like that she can absolutely quit, but AFTER cleaning up her mess not in the middle of it. She just ran away, and in her heart of hearts I think it's not because she got yelled at but because she couldn't face the reality of the feeling that another one of her ideas had failed due to her slip up (that's why she lost it on Richie too 100%, which is unlike her, just like leaving bc of yelling). And don't even get me started on Marcus. I like the guy and I totally get that he just sparked his passion and that he's like a little kid right now, just desperate to explore and grow. But while you are on the job where people are depending on you to focus on your *actual* job and the dishes you are *actually* supposed to be preparing, you can't block out all the chaos around you and abandon your responsibilities all excited and then be surprised if your boss is anything but thrilled by your lack of commitment to your actual tasks and utter inability to read the fucking room. Now what irks me the most is the aftermath. (minor spoiler) This didn't happen in this episode but I remember only one person who apologized in this situation in which 3 people were at fault and those 2 who pissed him off in the first place never came off their high horse. Only 1 had the balls and *humility* to admit that they reacted poorly. The other 2 were bitches about it till the very end and I could never really wrap my head around that. That's the reason why I'm sick of it when people defend only Syd and Marcus, it's not like Carmy lost his shit without any reason either. (No offense or directed at you guys btw, just my general opinion on the situation)

I've blown my lid at people for similar shit doesn't make it right but its 100% understandable. This episode is perfect example of the knock on effect one little mistake has, leading into more and more and everything going to hell. People shitting on Carmine have never worked in a restaurant and it shows, that shit can happen every day if the place isn't run well.

I agree 100% with this. While I get the argument that Carmy is the manager and handled everything in an immature way that foisted all the responsibility to Sydney, Syd is still the one who pushed for the to-go orders in the first place. She was the one that chose to give a customer her risotto over Carmy’s head. She escalated the fight with Richie and then didn’t practice proper knife safety. She was absolutely responsible for most of what happened, and she never apologized for overstepping and leaving everyone else to deal with her mess.

I’m surprised that people think Sydney was wrong about “this is on you” - the whole season has been leading up to this and the tension’s been building for a while. From the beginning, Carmy has put a lot on Sydney (esp in this episode, telling her to train Tina’s son - not asking her - instead of straight up telling Tina not today, it comes across like he wants to punish Sydney for the risotto) You can see through the episode she’s trying to go over the to-go process with Ritchie but of course he’s avoiding being helpful as always And then CARMY is the one who switches on the to-go tablet suddenly, and just says “let’s go” - like, wtf. She tried multiple times to have a talk with Carmy but he was already in an attitude from the beginning and not open to talking/just wanted to bottle up like he always does. The EC and sous need to be on the same page with every service. You have to be on the same side, no matter what, but he was already pushing her away (when she was telling Ritchie that the to-gos were agreed upon by her and Carmy, Carmy throws in a quick “yea…your idea, but yea” - clearly distancing himself from it) Anyway maybe she shouldn’t have quit mid-service but at that point, it’s a dignity thing. Super relatable in the hospitality industry to have walkouts when the restaurant is mismanaged and chaotic and toxic. I never did it myself, but I came close a few times because you really can reach a limit on your sanity in this kind of environment, especially if your boss is literally screaming and cussing at you. (and at everyone…he absolutely escalated a situation that a proper EC should’ve been able to deescalate) I love Carmy and I think the show does a great job of showing how flawed people can be, and how relationships between flawed people can be really tough to navigate. He needed this all to happen to grow from it and realize the kind of EC he wants to be.

I think Syd is partially responsible but also, people really down play the fact that this is Carmy’s fuck up too. He’s responsible for the whole restaurant, he’s the owner; and ever since Syd got there he’s had a habit of dumping things on her because she’s more skilled than the rest but he doesn’t help her, he just leaves her on her own. It’s his job as the manager to check in and oversee everything, especially something major like this. He knew Sydney has never done to-gos before and still didn’t bother checking her work. Then he yells in her face about it when things go wrong, as if it’s ONLY her responsibility. I get what people mean about being annoyed when she said it wasn’t on her but a part of me also saw where Syd was coming from too. It’s not fair to expect her to implement these big changes on her own when she not even the manager. I don’t blame her for walking out tbh lol

This fails to take into account she constantly pushes things and tries to control the direction in a restuarant she has zero financial or emotional stake in. She's far too green (as the show literally points out with her pre beef positions.) Carmy has responsbility to for how things are handled but he's also working through an insane amount of stress from turning around a kitchen full of people treating the place as a hangout spot rather than a place to make good food and the issues he's had with his family and the loss of his brother and the massive financial burden he's left with. He's juggling 10 plates at once and one of those plates is persistant in trying to push things in the direction she wants which may not be the right direction at the time.

The whole episode was a single shot. It's crazy when you think about the sheer difficulty of pulling that off - the actors all have to remember all of their lines for the entire episode and the cast and crew have to move quietly around this small space while the on screen actors are telling the story, and if anybody screws anything up, you have to start filming the whole thing from scratch again. No idea how many takes it took to film, but hats off to everyone involved on putting this technical masterpiece together.

Fun episode trivia: The narrator paying homage to the city of Chicago at the beginning of the episode is a well-known local DJ named Linn Brehmer, who works for Chicago alternative rock station, WXRT-FM. It's very notable how much the City of Chicago itself is a character in the show.

Film recommendations: Boiling Point is a 2021 film about an evening at a restaurant kitchen that’s considered a one shot film. Never seen it myself and haven’t looked too much into it so I don’t know if it’s actually a one shot or if it has hidden cuts, but heard good things about it. Chef is a film by Jon Favreau in 2014 about a chef who gets into a beef online with a food critic and ends up going into a food truck business. This is a film I love.

It's a bit of a stretch to blame Sydney for creating the dish. She wants to be a chef like Carmy, it's her passion. Her not wanting to waste the food giving to a random customer who turn out to be a critic is purely coincidental . The Bear is not some Michelin star restaurant that expect the visits of food critics. The clash among the characters are inevitable, they should take that responsibility for escalating the situation. Waving a kitchen knife is definitely a no no, never mind stabbing someone whether it's intentional or not.

I love your reactions. This episode was so good. Here's how I see everyone's breakdown in this episode (and I love them all so don't think I'm favoring anyone). 1.)Richie as you mentioned is worried about change. He misses his best friend. He was like a brother to him and was maybe the closest thing Richie had for a long time. Now all of a sudden he's taking orders from his best friend's little brother. And on top of it, new people are getting hired, new ideas are happening, new changes in the area are happening and Richie can't cope with all the change. Because change means Michael is really gone and Richie doesn't want him to be gone. He predicted this 'new" system wouldn't work and was kind of happy when it didn't because it proved his point that change can be disastrous. 2.)Carmy on the flip side wants to change the restaurant. You will learn more about this in the season finale but essentially it has to do with Michael too. Changing the restaurant for the better and not selling it is Carmy's way of coping with his brother. But the thing about Carmy is he isn't really coping at all. He keeps a lot of things inside and when chaos like this happens, he explodes. For instance, you can tell it frustrated him that Syd gave her dish to a customer when he said it wasn't ready yet but he tried to be a good sport about it. But when the tickets started coming, he lost his composure and his repressed feelings about the dish came out. And that's why Syd was like "What does that have to do with anything?" Yes, Carmy lost it under pressure but he wasn't being as bad as his NY chef. He was just at his wits end and I think half the freak out was because he blamed himself for all of this. 3.) Sydney. She's great in so many ways for this restaurant and her ideas are brilliant. But like Carmy mentioned, she is impatient. Her past employers mentioned that and we get to see how that impatience can cause some of this. Nevertheless, her intentions are only to help the restaurant grow. She wants the same thing as Carmy. Ultimately, this was her break down episode because she too felt the immense guilt of messing up and was stressed and trying extra hard to fix it and was only getting yelled and so she took it out on Richie and gave up towards the end because it wasn't feeling worth it anymore. Don't worry, this won't last for long. I can't wait until you see the finale. It's the best in my opinion. And you're gonna love season 2. I am so excited excited for your reaction. The season 2 finale has me currently dead and I'm waiting for revival with s3.

Oh boy… the way I’ve been waiting for this one and refreshing for hours to see this video! Loved how this episode was all in one shot. Truly a masterclass in a short and pressurized television episode. Wow. Just wow! Everyone involved was impeccable in this. This is a realistic depiction of what 20 minutes would look like (in real time) while working in a kitchen, especially on a bad day like this. There’s so much to discuss but I think it’s pretty self-explanatory what happened: As much as I love Sydney and consider her one of my favorites, this was her fault for sending a dish that wasn’t ready yet because Carmy told her that it wasn’t. I know she wasn’t aware of the fact that the customer was a food critic, but whatever… it was also on her for leaving the pre-order option open and having the audacity to say that it wasn’t her fault. Because it WAS. And going off on Richie like that pissed me off because for the first time ever, it wasn’t his fault. He remained calm, cool, and collected, showing us how he’s grown accustomed to people putting him down, making him feel even worse than he had been already. It makes me so sad and mad because Sydney had NO right to mention his kid. He was right about how condescending she was being (because let’s face it: being in such a stressful situation can bring out the worst in someone, and we already know that Sydney is impatient because of what Carmy said in a previous episode). I also don’t like how she chose the worst day to quit. I mean, I get it, but come on… don’t do that when you’re running the new program. She should’ve waited until service was over to bring Carmy aside and tell him that she couldn’t deal with all of it anymore. It’s also on Marcus, and you guys were right to be worried about him. It’s good to be passionate about your work, but your work consumed you and made you oblivious and distracted to the rest of the team. He wasn’t acting like a part of it and chose the worst possible time to show off his donut that he’s been working on all season. I feel for him… but I don’t agree with his actions. He and Sydney weren’t acting professional at all in this. Even Carmy wasn’t because of the way he was treating his employees. Lashing out this way is not the way to go, but alas, it’s a bad day in the kitchen, and things just kept getting worse, so it was hard for him to control himself like nearly everyone else. Now for the best part… it’s this entire video!!! I was looking forward to seeing your reactions and hearing your discussion, and you guys once again didn’t disappoint. Your reactions were priceless! Exactly the way I expected it to be 😂😭 The discussion at the end was great as always. Thank you for YOUR ‘review’ ❤️ (see what I did there? 🙈)

I have been so thrilled you guys have been reacting to this amazing show, and this episode was no exception. One of the greatest episodes of TV ever (if nerve-wracking). My take on the central issues is -- Sydney was wrong to give the dish to the critic. Yes, it all worked out, but she defied Carm's DIRECT order and that is just not okay -- and it also directly led to an outcome they weren't ready for. She also made a mistake with the preorders which combined with the review for a nightmare day for all of them. Meanwhile, Marcus is a sweetheart but he was STILL working on those damn donuts even after Carm openly begging him three different times to step away and focus on the cakes. Yes, I absolutely think Carm was being an ass and was absolutely not okay in his behavior and reactions to both Syd and Marcus. But Syd and Marcus were wrong and deserved to be called out (not screamed at). Meanwhile, the sheer production finesse by the actors, directors, and set/crew people for this episode were AMAZING. There are whole walls being moved seamlessly between scenes to keep the flow going. Just incredible work by all involved.

the thing is that both sydney and marcus did fuck up obviously but the reason they walk out isn’t because of this one incident. it’s because of everything leading up to this. sydney has been trying to communicate with carmy all season and he’s mostly refused. he’s very volatile. she even told him they weren’t ready for this. she doesn’t leave because he gets mad at her this one time she just feels so over all the bullshit. plus like i understand it’s a high stress environment but a worker is well within their rights to quit if their boss speaks to them the way carmy was acting this episode. plus and this is a very important note: this isn’t real life. it’s a tv show. it’s a story it’s presenting us with ideas and characters and metaphor and theme. obviously it wasn’t handled in a realistic way because the show isn’t a documentary it’s a story written to get across these things. for example the ‘this isn’t on me’ line that so many people are mad about is actually a great line. because it tells us so much about sydney. she has a fear of failure and a hard time admitting fault but it also shows in the context of the whole show that it isn’t just about this one incident. she’s telling carmy if the beef does fail it will be his fault because of how he treats people. so it tells us so much about what she thinks and also presents both of their flaws very well. i think it’s also important to note that carmy put his hands on marcus before smacking the donut out of his hands. which is obviously not okay. everyone in this episode is at a breaking point and they all fuck up. trying to singularly put the blame on anyone is unfair.

(And yes, just implying the kid has a shitty parent implies the kid’s life sucks too, which is attacking the kid in its own way imo) Though (season 2 spoilers) I also agree no one nearly gives Carmy as much shit for doing the same thing in the season 2 finale. Even if they're somewhat 'partners' Sydney still responds to Carmy, he's the top chef so what she did was not only going behind Carmy's back but the mistakes she made (leave the pre-order system on n stabbing Cousin also not saying "corner") she's responsible for 100% n should be accountable for, same thing with Marcus n focusing mostly on the donuts when they were having a shit show of a day. The fact that it was all done in one shot tho it's masterful, so much chaos to be done in one shot, bravo 👏🏻

Everybody in every comment section on every reaction to Review completely lets Carmy off the hook. He is the problem here. Anybody who has worked for someone like this knows this. There were so many issues with how he handled the service it’s wild. 1. Turn off the machine lol. 2. Don’t panic or yell at the staff that’s here to help you. Especially those who haven’t done anything wrong. 3. Ensure that everything is set up prior to the service not just throwing it on Sydney to have completely perfect. It’s his responsibility and honestly is completely crazy that he didn’t set up the POS system himself. “It’s your idea Chef” that is a complete cop out, it’s your business Carmy?! Did Sydney screw up, yes, was Marcus completely unhelpful, 1000%. But that doesn’t negate the fact that Carmy is terrible under pressure and makes everything much worse.

Exactly!! Very well said. Carmy has some blame here too but the focus is always on Sydney and Marcus as if they’re the only ones who messed up in this episode. He handled the situation very poorly and that helped fuel the chaos. Sydney had also previously expressed that she didn’t want a verbally abusive work environment with constant yelling. That’s what led to them quitting even though it wasn’t a great thing to do.

Loved your reaction as always. You should watch society of the snow. It's a great movie and I would love to hear what you have to say about that one. If you do watch it I recommend the original language with subtitles, the acting was amazing

I’ve said this before and I’ll say it again. This show is THE most accurate representation of the food work life ever put to screen, across the board it’s accurate to a scary level. It takes a certain brand of psychopath to thrive in it. It’s not for everyone and as much as I love it It’s a life I’m glad my kid didn’t follow me into. This is real, it isn’t always like this but this shit does happen. Walking out during the storm while understandable is a cardinal sin.

Love watching you guys. This has nothing to do with The Beat but I gotta recommend that you watch the movie ‘Unthinkable’. It’s a highly underrated and slept on movie that may be one of Samuel L Jackson’s best performances.

I love absolutely love Carmi but the bulk of the blame lies on him. Everyone else could’ve messed up exactly like they did and if Carmi (the owner) would’ve turned off the orders, canceled them, and regrouped without having an abusive meltdown, it wouldn’t have been such a mess. This stuff happens in restaurants. You can’t act like this.

I get people get riled up about Syd and Marcus, especially given how it “resolves”, but Carmy definitely made the wrong choice in exploding at the situation and choosing to try to keep up with the pre orders instead of just canceling them. That’s on him. I do agree all five of the leads did bad things this episode. But that’s why I love the show. They’re not perfect, and their flaws were bound to lead to a head at some point, and it does in this episode.
