I love reading, eating, watching and researching fine dining. It’s so fascinating. It’s delicious, beautiful, artistic, finessed, aesthetically pleasing, and educational as well.

One of the two best meals I've eaten was at VDM. Amazing way to spend an afternoon, and worth every cent

I’m like a year late on replying. But I think that’s chimi churri (green sauce) that was served on the lamb

Ok I wasn't super impressed because there were 5 desserts. The fruit rollup, sherbet palate cleaner, then 3 more desserts at the end. The selection of cheeses is also sometimes served in lieu of dessert... So altogether, it was like 6 dessert courses. The cheese can be very heavy and the desserts calorific. The intention at a fine dining place should not be to fill ppl up on empty calories from sugar and dairy. The lamb and marron were the "mains" - very good and filling. The damper was nice but for $350AUDpp I wouldn't fill up on bread and cauliflower puree. Then they had the oyster and caviar as the other 2 savoury dishes which were pretty small appetisers. The salad course was the tomato and strawberry dish. Again more fruity rather than greens. I think there could have been better balance in the courses, like more meats and maybe one green/salad dish and more vege based courses. Pilot (Canberra) was a 13 course menu for $130 (now $138). ( With complimentary tea and sweets as well) The plating and possibly cooking is not up to the standard of VdM, but they are definitely inventive in the type of dishes they serve. They also use native and other unique ingredients. I thought even that was overpriced, because of the heavy use of desserts and starches. But it had much better balance than this, as well as more dishes. $350pp is wayyyy too much for this!! I can see Google reviews from 3 or 4yrs ago, the food looked much better.
