    A Thai here and I understand where she's getting at. It looks like an easier version of "baked prawns with glass noodles" It's traditionally served in a steaming hot pot with spice in the bottom so it's easier to eat. And we also use pork belly as the fat element and it adds that umami flavor to it.

    I'm going to try this but I don't know, maybe I break the cinnamon and the star anise in a little cloth pouch so they release the flavour without getting in the food.

    Huge nigella fan but let's be real here. You can't put whole shards of cinnamon in a dish like this. Take it out of the sauce before you add the prawns.

    OMG!!!! i maek this dish for my nephew and and the cinamun cut his mouth, crying and blood everywhere!!! i took him to hospital because he needed stitches and now my sister hates me!!!!!!!!!! :'(

    Probably not the best idea to break Ceylon cinnamon into shards since, as numerous commenters have pointed out, it goes into a million pieces and will be bothersome to pick out while eating. Better to leave it whole or use cassia bark (the variety of cinnamon typically sold in North America), which is thicker and doesn't splinter as much when broken. Still, I'm very tempted to try this.

    Those spices... Booby trap, I called them. Make awesome dishes with them but an accidental bite of them will put you off the dish itself.

    I'm a huge fan, but all those sharp, evil looking shards of cinnamon, viciously tangled up in those snarly noodles, is just wrong. I'd avoid that dish if I saw it on the table.

    Being an asian myself, to me, that looks perfectly fine. Just pick it out when you eat. It isn't hard a 6 year old could do it. Stop being spoilt

    Temsulong Lemdur The way she breaks the cinnamon still allows small sharp shards to hide in the midst of the noodles. There are much better ways to prepare the cinnamon.

    @@temsulonglemdur2497 I'm Asian too, born and bred in Singapore, and a classically trained chef. And sharp shards of anything on a plate, unless it's chocolate, is never alright. But I'll tell you what it is. It's a hazzard. She should have left the cinnamon in quills or used ground cinnamon, so anyone eating this, need not worry about small shards getting tangled in the snarly noodles that may escape detection and end up in their gullet, as happens with fish bones. Everything in that dish, is brown. So easy for a shard to hide in those noodles. How is it possible that you cannot see the possibility of this happening? Calling out a hazzard does not make me spoilt. Or do you think that perhaps, having a white-sounding name, makes me automatically "spoilt"? especially since I'm talking about an Asian dish? Racist much? Don't make assumptions like I wouldn't know what Asian food should be like, based on my name. I have the right to express my (educated) opinion without being labelled "spoilt". Instead, why don't you 1) stop being presumptuous about me, and people in general, and 2) stop being an opinion nazi?

    Now only if she'd let that sauce in the pan reduce abit and become sticky and remove the cinnamon shards before adding in the noodles .still this looks great

    Its 5.09am here in Scotland but I could eat that now ☺☺ One thing Im not sure about is leaving the shards of cinnamon in the meal. Surely that could be dangerous for choking. Saying that, I'd still eat the plateful ❤❤❤

    the asians never use cinnamon that way.it's too much. and also the soya sauce should never be cooked to bubble up that way. just a little thought.

    As delicious as this sounds, it seems kind of pointless putting in crumbled shards of cinnamon when they're not to be eaten. You'd have to spend all your time picking them out as you're trying to eat.

    Not sure about the shards of cinnamon. You could just break it in half only. Then pick it out at the end. Or even just leave it whole. Why break it up?

    Before even the barks were added I thought this was an awful dish but then she put ground cloves and even more cinnamon in ground cinnamon! How can somebody with such a high level intellect like Nigella put such an awful dish together! Wow, beggars belief, maybe one in ten dishes of Nigella’s great. Meh, I never come to see her cooking anyway so I shouldn’t complain.

    Most Thai food has inedible bits of green bits; Lime leaves, lemongrass, chunks of galangal. You must understand they think differently. Liken it to bits of bone you might get on your plate, they're there to show you how the food was cooked and that it is authentic, but you don't eat it. So it's like the vegetarian bones as it were. Hope that helps you rethink it.

    Not just Thai, mostly Asian cookings will have inedible spices in it. But Cinnamon stick shouldnt crack up like that. Just saute it long enough in the oil it will give out the good amount of aroma and taste.

    I am a huge fan of Nigella, but this dish is just.... No. You don't break the cinnamon like this for a noodle dish; it can easily cut your mouth. Also such a big stick of cinnamon for one serving is totally unnecessary; I add this amount for a pot of stew. The seasoning for this dish is heavy but one-dimensional salty, so it really needs more balancing, at least with a bit of lime in the end or more sugar to cut the saltiness. A dark brown bowl of glass noodles with overpowering cinnamon flavour is not pleasant, trust me.

    coralarch The stir-fried veggie+star anise&cinnamon+soy-element looks like a Chinese influence. Southeast Asian cooking traditions were heavily inspired by India and China.

    For an asian, cinammon in a noodle dish really is very very very disturbing... It's like putting mustard in your dumpling. I always find westerners to put their own twist to Asian cooking but failed miserably..utterly disgusting combination
