    That first one feels to me like a toasted cheese sandwich with a spoonful of thick tomato soup on top. Using such a thick piece of bread but not letting the sauce touch it and sog it up is an interesting idea.

    Hey Mike, I just want to thank you for creating such top tier content on a regular basis. You have really inspired me to get back into cooking (I graduated last year and landed my first full-time job, so my passion for cooking completely depleted because I was so bogged down with work) but your videos came to the rescue! I have tried many of your recipes and I just admire how relaxed and comfortable you are in the kitchen. Your willingness to accept and learn from mistakes is admirable and I am grateful to be on this journey with you 😊

    Mike essentially gives you some clues, it's flour, oil (usually it's olive oil for the flavor), salt, some sugar (not a lot, but it helps the yeast rise), and water. No baking soda or powder in it. For my dough recipe, which came from Flieshman's site says to add the yeast to the water (2/3 cup), add the sugar and let it proof, add to the dough, oil, and salt mixture and then mix (I use my food processor) and you then have pizza. I often let it rise/rest for 30-45 minutes in a warm spot until it doubles in size, then shape into a pizza.

  • @johnhpalmer6098

    @johnhpalmer6098

    2 жыл бұрын

    There is a subtle difference to it, charred is not quite burnt, in other words, it imparts a smokey aspect to foods, and is still edible, it's done with intention to impart a more intense flavor to foods, but is just beyond the mallard reaction. Burned food is simply inedible, bitter and rank tasting. It's a subtle distinction, at best, but it is a thing.

    I'm vegan now, but I used to eat a lot of dairy. Violife is definitely a good brand, but I never recommend pre-shredded. It won't melt well, just like the way pre-shredded dairy cheese doesn't melt well due to the anti-caking agent. My favorite is the Violife feta block, which melts into something akin to a cheese sauce. It doesn't have the funkiness of dairy feta, it almost seems a little gamey like a buffalo mozzarella or a mild flavor of goat cheese. Because it's soft, it melts into a cream without the stickiness caused by the starch in a dry vegan cheese. I hope you'll try it.

    My experience with that vegan cheese is you do not want to overcook it. I like it in this recipe I developed: Chickpea Enchiladas Verde 1 15.5 oz. can chickpeas, drained and rinsed Vegan Ranch Dressing 1 small chipotle pepper in adobo sauce a little almond milk 10 to 12 corn tortillas, warmed 1 12 oz. jar Salsa Verde 8 oz. Violife shredded "mozzerella" sprinkle of ground cumin and chili powder s & p EVOO Make vegan ranch dressing and blend in the chipotle pepper in adobo sauce, thinned with a little almond milk. Dry chickpeas with a kitchen towel. Put in a bowl with s & p, a little ground cumin and chili powder and a little oil. Stir. Spread out on parchment-lined sheet. Bake at 350oF for 10 min. Put them back in the bowl and mash them a bit. Add the Chipotle Ranch Dressing and stir to combine. Oil a 9" x 13" baking dish. Add 1/3 to 1/2 of the salsa verde. Divide chickpeas onto tortillas, roll, and place in the baking dish. Top with rest of salsa verde. Top with mozzerella. Cover with foil. Bake at 350oF for 20 min., then uncovered for 10 min. Serve with rice. Ranch Dressing Stir all together. Taste and adjust seasonings. 1/2 c vegan mayo garlic powder and/or fresh minced garlic onion powder dry mustard dried oregano nutritional yeast dried dill dried basil dried parsley s & p paprika or smoked paprika a small cupful of apple cider vinegar vegan milk

    Vegan cheese is tricky. Slightly wetting it by mixing it with just a little bit of vegan cream or even sour cream (at least the one kind I get here in germany) makes it melt and crisp up so much better! The taste however is extremely dependent on the brand and honestly most are not too good. In general, I do not use a lot of it and only add it as an additional light flavor on most occasions.
