As an Italian, born, raised and still living it Italy, I must say I really liked all of the recipes. And cream in pasta is not necessarily prohibited, just needs to be used it the right way like you did!

I follow both of you guys. How great is it to see your worlds collide. I've been following Jim's channel for a while and it really makes me miss my grandmother's cooking.
I'm from Chicago and my brother moved to STL last year. I just want to say that I was so glad to hear dude mention STL when it comes to Italian food because before my brother moved there, I had no idea what a large and amazing Italian area they have. I think when people think Italian-American cuisine they typically think of places like NY and Chicago (though like mentioned, they're both unique), but hardly anyone thinks of STL. Nice to give them props.
Just wanted to say, I love Jim’s channel. It’s my favorite Italian-centric channel on KZread. For the very reason that he focuses on real food. Full disclaimer: I’m 100% Italian. All of my grandparents were born in Italy and were raised in either New York or the north end of Boston. I’m from Southie myself. My nona embraced the American Italian culture and she believed the diversity made food better; believe it or not, her favorite thing to make was fried chicken wings. They sat on the table right next to her tomato salad and pasta. I always see these staunch Italian vocalists crying foul on any video where carbonara isn’t made with guanciale, or if an Alfredo is made with heavy cream. As someone who grew up with a family that literally got off the boat, I can say with authority that not all Italians are that picky. If it’s good food and it tastes amazing and brings the family and friends to the dinner table for good conversation and great memories, who gives a shit if you don’t know how to make a traditional cacio e pepe, or if you’ve added the right ingredients to your bolognese. As an aside, my grandmother was from a poor part of Florence. She learned to cook with whatever ingredients she had available. A lot of traditional Italian dishes were born out of poverty and necessity. Even Alfredo was considered a children’s dish and made to appease kids (like Mac and cheese). It’s silly to me that we now have gatekeepers trying to maintain the traditions of poor rural farmers and fisherman who only used the ingredients they did because they couldn’t afford anything else.

I totally understand what you're saying and where you're coming from...however....I do believe it's important to know authentic recipes. Yes change it up as you want, but knowing and honoring and respecting the original is a must. But people should go about it saying it in a respectful way.

the problem of american carbonara is surely not the bacon vs guanciale, it's just that cream is not egg, prosciutto is not bacon and there is no greens in that. And yeah italians can cry too much on food, but americans simply do not understand how boiling water works, how cream is just the excuse of somebody that is not able to cook and prosciutto is not frickin bacon or guanciale, AND ALSO WE DON'T USE THAT MUCH OF GARLIC ON EVERYTHING. It's just very sad being called crybabies just because you still can't learn how italians cook, even if in every video there are at least 100 comments saying THE SAME THING.

@@manehbag732 There is no such thing as authentic. Immigrants are authentic. They went out and searched for a better life, brought their culture with them and made it work with what they had in their new home. The recipes didn't change because people forgot or because they're lazy, it's because it had to change. How is that real life impact not authentic?

@@1bwash there is 100% something called authentic. It's a shame you're so quick to get offended at something positive. Yes yes I know you'll say you're not offended 🙄 there is an authentic way to make certain dishes. That's a fact. There are dishes that for example were made with a certain vegetable due to location or season. If someone from another country afapts to it for themselves thats fine, but the authentic version belongs to a differentregion. Stop trying to find fault in a positive statement and turn it negative.

As others have already said, the first and third pasta dishes are traditional Italian recipes. The second one, although not traditional, doesn't have any offending elements like cream on carbonara, so don't worry😀. Mike your channel is really great, I love it!

You should do a pizza show with Jim. His videos on pizza are the most informative. Things like how to season a pizza steel or what type of cheese or tomatoes to use. He is an expert on the different N.Y. style pizzas.

Fun fact: we do use cream in Italy! It's called Panna vegetale, it's not your traditional cream, but I can say my mum made me a very quick pasta with some panna and parmigiano several times! All the dishes look good!

When I spent some time in Italy, I saw people using ricotta mixed with water in traditional recipes too, which is basically a cream replacement

Italy is a dairy country, of course Italians use cream in food. Just not in dishes others use cream in like e.g. carbonara, that is a classic mistake. As an American he cannot speak for Italy, but of course he does. 😄

Panna vegetale is what would be called "filled cream" in the US (it's basically cream cut with vegetable oil). I have no idea why one would choose to use it when the real thing exists.

This is so random, I just discovered his channel a week ago and have been watching a lot of his videos. He has good recipes but his b-roll chopping veg is a bit excessive lol. I highly recommend his baked pasta dish with penne and italian sausage, wow. The way he has his kid as his taste tester and rating system is adorable.
I am a Scots Italian who grew up in Bologna, watching my grandmother make her home made tagliatelle ragù, tortellini in brodo, lasagne…I love American Italian food, we should never look down on other culture’s cuisines as they are intrinsically linked to their history and you can’t diss that. At the end of the day it is all so tasty so just go for it 🤩🤩

Except for second pasta (never seen before), there is nothing strange in this dishes, they are 100% authentic Italian. Peas and beans are ones of the few exceptions of one pot pastas. Just an advice, in the pasta e piselli usually you also put the parmesan rind, butter, and a lot of black pepper 😉
