    Hi Mr Bayless, I have a marinade for you it is 2-3 cans of chipotle in adobio, 1 tablet broken of mexican hot chocolate, 1 bunch of cilantro, 1/2 a cup of gold tequila and 1/4 cup of lime juice, a table spoon of mexican oregano. it works great with skirt steak, chicken , pork,lamb and grilled seafood. rust my its my favorite and when i grill my neighbors flock.     Love skirt steak. Just want to point out to others that you should pour some of the chipotle puree out to a separate bowl if you're going to be dipping a brush on the meat and back into the mixture.

    I've bought skirts steaks in the UK and tried some of your recipes and love them. Only issue i find is that British Skirt steak is tough even when cut across the grain and cooked to a perfect medium rare....... I've spoke to my butcher about this and the only thing we can think of is that Americans must use a slightly different cut from a traditional English cut of Skirt Steak.

    I lived in the US for a decade. Got back and couldn’t find the right cut of skirt/flank until I worked in a store with proper butcher. They they said the (UK) outside (leaner) cut you should ask for is ‘rump skirt’... The cheaper (UK) inside skirt cut is called goose skirt, but it’s much tougher. Get the rump skirt. That’s the equivalent of US outside/tender flank. Hope that helps :)

    Great piece of knowledge on the different skirt steaks, I've been to many meat sections at places like Sam's and Costco, and when you asked about inside and/or outside skirt steak, they look at you with a blank stare, just no idea that there were two, or simply they'll direct to the flank steak... sad.

    Sam's and Costco doesn't want to pay decent wages so they they don't hire real meat cutters. The people they train can cut steaks and chops from simple sub-primals but don't really know too much else.

    Hello Dwayne, we found these on Amazon, just type in copper grill mats. They were about $14-$15 for 3, pretty good cost in my book! Also they clean like a dream! Happy Cooking!

    I like the INSIDE skirt because its much cheaper AND thicker. The "chewy" part of it doesnt bother me at all. Kind of like sirloin steak vs. filet. I'd rather have the BETTER tasting cheaper cut even if a little "chewier".

    ooooh. Cross-contamination? Did Chef Bayless use the same small processor jar of chili sauce that he dipped the brush in from the raw steak, then use it in an un-cooked salsa?? If he didn't, that's not what the video seams to say.

    It was definitely the same bowl of chipotles, but there are a few things you need to consider 1. This is not being served at a restaurant, he is cooking for himself in his backyard, and if he wants to take the (very small) risk, he has the right to 2. The chipotle was mixed with the charred tomatillos and onions, which were piping hot from the grill, the small traces of raw beef juice that were in the chipotles were probably cooked off during blending 3. As he said, the chipotles have a fair amount of acid and salt, which will also make it hard for any remaining bacteria to grow. He is probably eating this right away, so the risk is actually very low and again, if he wants to take his chances, he has the right to.
