Stuffed nasturtium leaves

Out of season, but a great reminder that warmer days are soon to come.
Today I'm making stuffed nasturtium leaves (well, I made them in July, but i didn't get around to editing the video until now) Nasturtium are a beautiful plant to have in the garden, grows fast, has beautiful flowers that insects love and.... tastes SO GOOD. Literally every part of the plant. The leaves are a great ingredient for salads (or these rolls) the flowers are a spicy snack, even the seeds can be eaten like wasabi peas.
I love this plant so damn much.

    I just made nasturtium jelly today after having grown the flower for the first time. I guess that's why your video was recommended (from searching recipes) and I'm so glad it was! This recipe looks amazing and after finding out how spicy the leaves are I'm sure I'll like it.

    Let me know what you think if you decide to try this recipe :) I wanted to make nasturtium jelly, but the slugs got to the plant before I could. I’m keeping my fingers crossed for next year :)

    Didn't know that plant was edible! I've been with one for a year, and Its been growing small leafs... Now I know I was doing something wrong to the poor thingy... I'll try my best now... so I can eat her XD Thanks for the wisdom as always!!

    I don't think you're doing anything wrong actually. Nasturtiums are pretty moody. Some years they grow big with large leaves, other years they remain really small with one or two flowers. I don't know what makes them behave either way, so I just plant them every year and hope for the best :)

    I haven’t tried freezing them yet, so I can’t answer that, but it’d be an interesting experiment.

    It really depends on your filling. The nasturtium leaves are lightly peppery in taste, so combining with any type of savory filling should work well. My favorite is mushroom rice filling. For this I used thyme and rosemary, but by adding oregano would be delicious as well :)

    They simmer in the broth, but not too long (around 10 minutes) since, as you said, the filling is cooked and the leaves are quite thin.
