Strawberry cake with strawberry pudding! Very creamy, very tasty 😋
This time I don't have strawberry cake with vanilla pudding to offer, but with delicious strawberry pudding cream! This mascarpone, custard and strawberry cake is so delicious I could eat it every day! A divine strawberry cake with pudding for the whole family that melts in your mouth.
Ingredients/Recipe: (1 cup = 250 ml)
5 eggs
130 g sugar (2/3 cup)
A pinch of salt
110 g flour (4/5 cup)
30 g baking cocoa (1/4 cup)
1 teaspoon baking powder
Baking pan: 18 x 28 cm (7 x 10.5 inches)
Bake at 170 °C (338 °F) top and bottom heat for about 25 minutes
Strawberry pudding:
250 ml strawberry juice (1 cup)
25 g cornstarch (2 heaped tablespoons)
50 g sugar (1/4 cup)
Cream:
500 g mascarpone (2 cups)
100 g cream cheese (2/5 cup)
Add the cooled strawberry pudding.
Topping:
3 sheets of gelatin (5 g)
About 400g strawberries
250 ml strawberry juice
Possibly sugar (to taste)
Chill the strawberry cake for 4 hours.
Finally spread with the remaining cream. And decorate with crumbled cookies.
