Easy recipe for light and airy layer cake bases that beat the bought varieties by several lengths.
This recipe makes 2 layer cake bases.
Ingredients:
3 Eggs
120 grams Sugar
100 grams of all purpose flour
25 grams of cornstarch
½ teaspoon baking powder
Beat eggs and sugar to a very fluffy and thick eggnog.
Sift the wheat flour, baking powder and potato flour into the eggnog and carefully fold it together.
Fill the dough into 2 cake tins (20 cm in diameter), the bottom of which is lined with baking paper.
Bake the cake in the middle of the oven at 200°C hot air for approx. 10 - 12 minutes.
Let the base cool completely in the tin before you cut it free and remove the baking paper.
