🔸 Ingredients:
3 - 4 ears of corn
2 tbsp mayonnaise
2 tbsp greek yogurt
The juice of one lime
Spice mix (½ tsp of each: red chile powder, cayenne pepper, garlic powder, onion powder and salt)
Queso fresco
Cilantro
🔸 Instructions:
Soak 3 - 4 ears of corn in water for about a half hour. Drain and grill with the husk on until all sides are charred. Let the corn cool slightly and pull back the husks and remove the kernels using a knife over a large bowl. Next add 2 tbsp mayonnaise, 2 tbsp greek yogurt, the juice of one lime and 2 tbsp of the spice mix. Mix until combined. Top with queso fresco and cilantro and extra lime. Serve in individual small bowls. Enjoy!

Wow June, thank you so much. Such wonderful words to hear. We do have a version of posole in the channel. We have a version with red and green as well. I have been making posole (traditional) in the instant pot these days and I find it works great, but boiling it for a few hours on the stove always does the trick as well.
