That Aubergine Caviar looks mouthwatering.
You might try marinating them in a shallow pan of oil if your going to bake them. Make it hot enough, you should get a similar effect to deep frying.
I wonder if I might bake the chickpeas? I do not like to fry. Any advice, anyone? Thanks for a lovely quick recipe that deviates from the norm!
