recipe:
1. fried tofu, 10 pcs (100g)
2. white onion, 40g
3. red pepper, 30g
4. green pepper, 30g
5. yaki spring onion, 20g
6. mangetout (defo optional), 30g
7. fresh chilli (sliced), 10g
8. garlic paste, 5g
9. ginger (minced) 5g
10. long dried chilli, 3
11. thai rice, 1 cup (300g)
12. firecracker sauce, 75ml
13. sesame oil, 5ml
14. shichimi powder, 2g
15. ramen spring onion, 5g
16. toasted mixed sesame seeds, 2g
17. lime wedge, 1 pc
18. vegetable oil, 15ml
method:
1. heat wok + add 15ml vegetable oil
2. add ingredients (1-10) + stir fry until onions are caramelised
3. continue stir frying for 30 seconds
4. add 75ml of firecracker sauce, turn heat off + stir ensuring the
fried tofu is well coated
5. place sauce and ingredients onto a hot plate
6. make a well in the centre of the sauce and ingredients
7. place miso cup of thai rice into the well of sauce + cooked
ingredients
8. garnish with shichimi, sesame seeds, sesame oil, ramen spring
onions + a lime segment on top of the rice
9. serve + enjoy

Got a Wagamama today in Silverburn. In my order half the ingredients were missing which was disappointing and very bizarre. The waiter said there was an audit by Wagamama management so everything was going crazy and they were all running about very stressed. 3 times when we asked for something or kindly complained about missing ingredients or food it was ignored. Service has always been perfect before though. Everyone’s human, though, so we understood and didn’t complain and still left a hefty tip. I think the management that do random audits in branches clearly need to organise themselves a bit better though and appreciate that they’re hindering customers. I’ve been maybe a hundred times over the years but feel like I won’t ever go back
