Is the foil wrapped over a diffuser?

yep... it protects the diffuser from the grease, drippings, and meat. they still get dark, but the foil catches all the crap that you would otherwise have to clean. it a smart idea.
Welcome Back Pitmaster! What is the point of the butter, brown sugar, honey or apple juice? I am going to attempt vegan ribs.

Hey, its all about flavor. Butter, sugar, apple juice or honey help add flavor and a little extra moisture to the ribs when you wrap them up. It an additional "layer" of flavor.
What is the temperature you keep the coals at during the 3 hours that you are cooking the ribs?

I cook almost everything at 275. Takes the ribs a lil over 3 hrs to cook at that temp.
